70 gram bladspenat
1 näve färsk mynta, valfritt
1/2 dl pumpakärnor
Gul ärthummus
4 dl kokta gula ärtor (alt kokta kikärtor eller vita bönor)
1 msk ljus tahini
1 msk äppelcidervinäger
1 näve färsk persilja
Flingsalt
Syrad gurka
1 gurka
2 dl vatten
1 dl äppelcidervinäger
Syrlig tahinidressing
3 msk ljus tahini
5 msk vatten
1/2 ekologisk citron, zest + saft
1/2 tsk lönnsirap, valfritt
Flingsalt
Gör såhär
Värm ugnen till 200°C. Skär tofun i kuber.
Skiva gurkan fint.

“Oat rice” is a new product in Sweden, it’s whole oats which need only about 10 minutes cooking time. If you cannot get hold of this type of oat you can use naked oats / whole oats. These need soaking + about 30 minutes cooking time. If using this you can pre cook it and then toss together it with the pan fried veggies)
Bakad morotsfalafel med basilika
Bild Agnes Maltesdotter
Ingredienser
2 förpackningar (à 230 g avrunnen vikt) kokta kikärtor
3 dl finriven, noga urkramad, morot
2 nävar färsk basilika (eller 2 msk fryst)
1 finriven liten vitlöksklyfta
1 tsk malen spiskummin
1⁄2 tsk salt
Rulla i sesamfrön.

Baked falafels, a favourite component which this time got a carrot and basil twist! Bake a whole tray filled with falafels at once — both because it saves time plus they can be stored in the freezer and serve many lunches and dinners to come!
This is a recipe from my book VÄXTBASERAT. The book is only available in Swedish at this time — but I’m hoping to see it out in more languages soon!

3 dl finely grated carrot, well drained (squeeze out the excess liquid)
2 handfulls fresh basil, or 2 Tbsp frozen
1 finely grated garlic clove
1 tsp ground cumin
1⁄2 tsp salt
1 dl sesame seeds for rolling

Lentil ragu with bean pasta and baked tomatoes
Scrolla ner för recept på svenska
This is my type of comfort food. Food that takes a bit longer to cook, but is very easy to make and doesn’t really require much work from you — it just simmers along all by it self!
I use lentils which doesn’t get too soft when cooking — as it gives the whole dish a nice texture — such as Swedish “Gotlandslins”, Puy lentils or Beluga lentils. I cook the lentils by themselves, in a separate saucepan, just to make sure I keep that texture. Bring them to a boil, let simmer for about 3 minutes them add a lid and remove from the heat. After 15 minutes you’ll have the perfectly cooked lentils; firm still soft!
Lentil ragu with bean pasta and baked tomatoes
Serves 4-6
Ingredients
1 yellow onion
2 garlic cloves
4 carrots
4 celery stalks
2 red bell peppers
8 dl vegetable stock
2 Tbsp red wine vinegar
2 dl lentils, dried
1 handful fresh herbs, finely chopped
Salt and freshly ground black pepper
1/2 Tbsp rapeseed oil
For serving
4-6 portions cooked bean pasta or any other type of pasta
500 gram cherry tomatoes
Fresh herbs
How to
Peel and finely chop the onion and garlic. Fry in a bit of oil, in a big saucepan until soft. Scrub the carrots, rinse the celery, cut the bell pepper in half and remove the seeds. Cut all the vegetables in small, same size pieces. Add to the saucepan. Fry for a minute. Add crushed tomatoes, water, vegetable stock and red wine vinegar. Bring to a boil and let simmer on low heat for about 45 minutes, until you get quite a thick sauce. Add more water if it feels to dry or thick.
Meanwhile cook the lentils in water and a pinch of salt in a saucepan. Bring to a boil and let simmer for 3 minutes. Remove from heat, add a lid and let sit for 15 minutes, until lentils are soft yet firm. Rinse, then add to the ragu sauce, add herbs and salt and pepper to taste.
Pre heat the oven to 175°C. Rinse the tomatoes. Put in an oven dish, drizzle with olive oil and sprinkle with salt. Bake until the tomatoes starts to soften, about 25 minutes.
Serve the ragu on a bed of freshly cooked pasta, topped with the baked tomatoes and fresh herbs.

Skär allt i små, jämnstora, bitar.
Låt koka i 3 minuter.

1 tsp dried thyme
3 bayleaves
4 carrots
4 beetroots
1,2 liter vegetable stock
4 dl red wine
2 Tbsp nutritional yeast
1 1/2 dl swedish lentils such as Gotlandslins, or any other firm lentils such as beluga lentils
100 grams kale
Rapeseed for frying
salt and freshly ground black pepper
Potato mash with horseradish and dijon mustard
600 grams potato
2 tsp fresh horseradish, grated
1 tsk dijon mustard
flakey salt and freshly ground black pepper

2 dl boiling water
1 dl apple cider vinegar
1 Tbsp maple syrup
1 pinch salt
For serving
Plant yoghurt
Fresh parsley, chopped
Fresh rosemary, finely chopped

Soak the chanterelles if using dry. Peel and slice the onion, finely chop the garlic. Fry in a bit of oil in a pot until fragrant. Add chanterelles, tomato puree, bayleaves and thyme. Fry for another minute.
Scrub the carrots and beets, cut away the bottom and top part of the beet. Cut carrots and beets in big pieces. Add to the pot together with vegetable stock, wine and nutritional yeast. Bring to a boil and let simmer for 15 minutes. Add the lentils and simmer for another 15 minutes, until lentils are soft but still got an “al dente taste” to them. Rinse the kale, tear the leaves in smaller pieces (remove the stalk but save for a smoothie moment to minimise food waste!). Add to the pot, remove from heat. Salt and pepper to taste.
Pickled carrot: Scrub the carrots, shred thinly. Bring water, vinegar, maple syrup and salt to a boil. Add the carrots, remove from heat and put on a lid. Let sit for at least 30 minutes.
Potato mash: Scrub the potato, boil until soft in lightly salted water, for 15-20 minutes. Drain and then mash with rest of ingredients. Salt and pepper to taste.
Serve the bourguignon with potato mash, pickled carrot och plant yoghurt, sprinkled with fresh herbs!

Fresh springrolls with strawberries, crispy vegetables and almond sauce
For the smaller buffet or your Friday dinner with friends and friends! Crispy rolls, filled with lots of flavours, colors and textures - served with a creamy almond sauce with a hint of ginger!
These yummy rolls could work either as the perfect family weekend feast, or when making a smaller buffet as a perfect buffet dish! When servering them during a dinner I like to prepare all the ingredients and then let the guests fill their own rolls - when serving them on a buffet I like to put them (as in the while roll) in salad leaves to make it easier for the guests to have them standing as well - perfect for a mingle party!
And oh - I should also mention that they are perfect for any day of the week too, just fill your rice papers with whatever leftovers you might find at home!
Now, let’s get rollin’!
Fresh springrolls with strawberries, crispy vegetables and almond sauce
12 portions on a buffet
Ingredients
12 small rice papers, or 6-12 bigger ones
125 grams fresh (Swedish) strawberries
1/2 cucumber
2 carrots
100 grams red cabbage
70 grams fresh spinach
250 grams smoked organic tofu
50 grams sprouts
12 fresh mint leaves
Mandelsås
1 dl mandelsmör
1 1/2 water
2 msk apple cider vinegar
1 tsp ginger, grated
salt and freshly ground black pepper
For serving
Fresh mint
camelina seeds, or sesame seeds
sprouts
How to
Slice the strawberries and all the vegetables thinly lengthwise. Cut the tofu in 12 pieces on the length.
Fill up a pie form / sauce pan or anything as big as the diameter of the rice papers with hot water. Dipp one paper at a time in the water for 10-15 seconds then put on a wet cutting board. Add a bit of the strawberries / veggies / tofu at the bottom part of the rice paper. Fold the sides inward, then tightly roll the rice paper, beginning at the end where you put the filling. Repeat with remaining rice papers and filling. Put on a big plate, and cover with a damp kitchen towel if not serving them straight away to keep them from drying. Make sure not to put them on top of each other as that might make them stick to each other, if you want to serve them on top of each other first put them in a salad leaf!
Mix together the ingredients for the almond sauce. Salt and pepper to taste.
Serve the rolls topped with mint and camelina seeds with extra sprouts on the side, and the almond sauce.

Cauliflower and chanterelle burger with fava bean spread, sauerkraut and shaved carrots
Juicy plant patty filled with flavour and crisp with some creamy spread and sourish and crisp toppings - that’s how I like to serve my burgers!
For a really tasty and juicy plant burger filled with flavours I like to bake all (well, most of them) the ingredients in the oven before mixing together my patty as that adds quite a lot of extra flavour! When they’re baked and all soft and sweet I mix it all together with some quinoa for extra protein, walnuts for some crunch and lots of herbs, then form in to patties and then oven bake, fry or grill them!
Serve between whatever bread you prefer, or maybe some crispy lettuce leaves, and make sure to add a few yummy toppings - like this fava bean spread with lots of herbs for creaminess, sauerkraut for extra juiciness and that lovely sour-in-a-great-way-flavour and raw carrots for some extra crisp!
Cauliflower and chanterelle burger with fava bean spread, sauerkraut and shaved carrots
8 burgers
Ingredients
1/2 cauliflower (300 grams)
200 grams fresh chanterelles, or 150 grams frozen or 20 grams dried
1 yellow onion
3 garlic cloves
1 dl / 0.4 cups white quinoa
2 handfulls of fresh parsley, or 2 Tbsp frozen fresh
10 fresh tarragon leaves, or 1/2 tsp dried
1 dl / 0.4 cups rolled oats
1 dl / 0.4 cups walnuts, chopped
1 tsp rapeseed oil
1/2 tsp salt
1 pinch freshly ground black pepper
Fava bean spread
150 grams fava beans, dried (OR use 1 package / 230 grams cooked chickpeas)
2 handfulls of fresh parsley, or 2 Tbsp frozen fresh
1 Tbsp cold pressed rapeseed oil
1 small garlic clove, finely grated
salt and freshly ground black pepper
Crispy carrots
3 carrots
1 tsp cold pressed rapeseed oil
pinch of flakey salt
For serving
sauerkraut (Can be bought in most supermarkets)
cress
Unsweetened rye bread, or any bread you like
leafy greens
How to
Pre heat the oven to 175°C / 350°F. Cut the cauliflower in smaller florets. Brush the mushrooms, fry in a pan (if using frozen ones just thaw them, if using dried soak them). Peel chop the onion and garlic. Put cauliflower, mushrooms, onion and garlic on a oven tray and bake for 30 minutes. Cook the quinoa according to instructions on the packaging.
Mix the roasted veggies, quinoa and herbs until a crumbly batter in a food processor. Add oats and walnuts and mix well using a wooden spoon. Let sit for 15 minutes. Form in to 8 patties. Put on a baking tray and bake in the oven for 20 minutes, until slightly goden and crisp around the edges. If you want some extra crisp you can finish by frying them in a bit of oil in a pan.
Cook the fava beans for 30 minutes, until soft. Remove any excess water. Mix with the rest of the ingredients in a food processor until a creamy spread. Add a bit of water for a creamier spread. Salt and pepper to taste.
Shave the carrots thinly using a potato peeler or mandolin. Toss together with a tiny drizzle of oil and pinch of salt.
Spread some fava bean spread on a slice of rye bread. Top with some leafy greens, a patty, sauerkraut, oil tossed carrots and cress. Add some extra fava bean spread on top and finish with another slice of rye bread.

Baked celeriac burger with carrot miso spread, sprouts and herb pesto
Tiny plant burgers with buckwheat sourdough bun + the essentials add-ons. That’s all!
Nothing gets as soft and sweet as a root celeriac baked for hours, it’s delicious! Thinly sliced it makes the perfect topping on a crisp bread or a piece of sourdough bread, teared in to smaller pieces it goes very well in a hearty salad and sliced like this in a burger! Use smaller celeriacs if making tiny burgers, and bigger ones if making a normal size burger - you get it!
When it comes to burgers I think that the add-ons are just as important, they can be really simple but I do love for them to be there. Here I made a carrot spread which I seasoned with miso, fermented soy bean paste, and a 1-minute-pesto with lots of herbs. Let gets cooking!
Baked celeriac burger with carrot miso spread, sprouts and herb pesto
8 mini burgers
Ingredients
2 tiny celeriacs
1 tsp rapeseed oil
Carrot miso spread
250 grams carrots
1 tsp light or dark organic miso paste *
1 Tbsp cold pressed rapeseed oil
1 Tbsp applecider vinegar
flakey salt and freshly ground black pepper to taste
Herb pesto
2 handfuls of fresh herbs, for example basil, parsley and cilantro
2 Tbsp pepitas / pumpkin seeds
1 Tbsp nutritional yeast / b-jäst
2 Tbsp cold pressed olive oil
1 Tbsp applecider vinegar
flakey salt and freshly ground black pepper to taste
For serving
8 mini buckwheat sourdough buns (or any bund you prefer), I get my from Mällyeko
pea shots
beet sprouts
How to
Pre heat the oven to 175°C / 350°F. Cut away the bottom part from the celeriac. Scrub the rest thoroughly. Brush the whole thing with oil and put in an ovenproof dish. Bake in the oven for about 1 hour, until it’s completely soft. Let cool, then cut in slices.
Wash the carrots, cut in smaller pieces and steam or boil until soft. Let cool. Mix with the rest of the ingredients for the carrot miso spread in a food processor until smooth. Salt and pepper to taste.
Mix together the ingredients for the pesto until a bitey texture using an immersion blender or food processor. Salt and pepper to taste.
Cut the buns in half. Put some carrot miso spread on the bottom parts, and pesto on the top parts. Top the carrot miso spread with two pieces of celeriac, sprouts and shots. Put the lid on top. ENJOY!
* Miso paste is a paste made of fermented soybeans. The difference between light and dark is (simply put) it that the dark one has a deeper flavour and more umami taste to it than the light one,

pepitas **
lingonberry powder
edible flower sprinkle

Golden hummus bowl with red cabbage, tahini dressed carrots and blood orange
Hummus bowl might be my favourite go to of all times. It’s the perfect creamy base to top all sorts of roasted, marinated and raw veggies and leafy greens with!
Hummus bowl might be my favourite go to of all times. It’s the perfect creamy base to top all sorts of roasted, marinated and raw veggies and leafy greens with!
Furthermore a hummus bowl can be made in so many ways. Firstly the hummus base can be made of not only chickpeas but also white beans, yellow peas, green peas and red lentils (which technically means it’s not a “real” hummus, but you get my point!) to mention a few - and you can season it with different spices; cumin/chili/turmeric/herbs are a few of my favourites.
As mentioned above the bowl can be topped with pretty much all veggies you can think of - choose what’s in season and/or what you find at home. Also, adding some nuts and raw shredded veggies gives that little extra finish the the whole thing. And add some cooked grain for an even more filling meal.
Now - let’s get cooking!
Golden hummus bowl with red cabbage, tahini dressed carrots and blood orange
Serves 4
Golden hummus base
2 packages (á 230 grams drained weight) cooked chickpeas
2 Tbsp light tahini
1 dl / 0.4 cups water
1 tsp ground turmeric
salt and freshly ground black pepper
Topping
1/2 red cabbage
400 grams carrots
100 grams kale, chopped
1 blood orange
1 handful of walnuts
Tahini dressing
1/2 dl light tahini
3 Tbsp water
2 Tbsp apple cider vinegar
1 pinch of chili flakes
salt to taste
How to
Scrub the carrots and cut in smaller pieces. Slice the cabbage. Steam* for about 10 minutes, until the veggies are soft but still have that al dente bite to them. Mix all the ingredients for the tahini dressing, salt to taste, toss with the carrots.
Rinse and drain the chickpeas. Mix tahini and water until creamy. Add the rest of the ingredients for the hummus and mix until creamy. Salt and pepper to taste.
Massage the kale with oil and a pinch of salt until soft and silky. Slice the blood orange.
Spread out the hummus in 4 bowls. Top with a handful of left greens, kale, cabbage and carrots. Top with walnuts and sprinkle some extra chili flakes.
* This time I steamed both my cabbage and carrots, both because it takes only a few minutes and I was very hungry when cooking. If you have more time, and want your cabbage and carrots to get that delicious crisp to it I’d suggest you roast them in the oven at 175 °C / 350 °F for about 25 minutes instead!
Tray of roasted root veggies with spinach, naked oats and turmeric hummus
Always a good idea: roasted seasonal veggies on a tray with spinach and steel cut oats. Served with a creamy turmeric hummus!
This is one of my go to-dishes when I want to make hearty and filling food without having that much time to spend cooking. Because this is food that almost cooks it self! So the idea of this dish is very simple; put whatever veggies that are in season/you have at home on a tray, add some cooked grain and leafy greens and serve with some kind of legume-spread/dip (such as a hummus) for extra protein. DONE!
By using veggies in season the tray will naturally change throughout the year. For extra variation use quinoa, buckwheat (soaked or cooked), sorghum or wild rice instead of naked oats, just to mention a few! And remember; when making of a creamy hummus - always make some extra and you’ll be well sorted for the coming days. A hummus is great to use as spread on a seeds cracker / piece of bread / in a wrap / with vegetable crudités, with any kind of salad or as the base for a hummus bowl (like this one)!
Tray of roasted root veggies with spinach, naked oats and turmeric hummus
4 porions
Ingredients
2 dl / 0.8 cups naked oats
300 g parsnip
300 g carrot
300 g mixed beets
1 handful dried apple
70 g organic baby spinach
1 Tbsp cold pressed rape seed oil
salt and freshly ground black pepper
Golden turmeric hummus
2 Tbsp light tahini (I like to use the non roasted one/light one here as the flavour is more smooth compared with the darker one which has quite a sharp taste to it)
1/2 dl / 0.2 dl water
1 Tbsp apple cider vinegar
2 packages (á 230 g drained) pre cooked white butter beans
1/2 tsp ground turmeric
1/2 tsp ground ginger
a pinch of chili powder
1 Tbsp cold pressed rapeseed oil
salt and freshly ground black pepper
For serving
2 dl / 0.8 cups naked oats
a pinch of salt
How to
Cook the oats in lightly salted water on low heat for about 30 minutes. You want them to be soft but still have a nice bite to them. If you cook it for too long you’ll get more of a porridge. Drain any excess water.
Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Scrub the root veggies thoroughly, then cut in smaller same size pieces. Put on a baking tray, mix with oil. Roast in the oven for about 20-25 minutes, until the veggies have soften and are slightly golden, but still has that al dente bite to them. Add the cooked oats, apple and spinach to the tray.
Mix the tahini and water for the hummus. Drain and rinse the white beans. Mix all the ingredients with a immersion blender or using a food processor until smooth. Add the oil and mix a few more seconds. Salt and pepper to taste.
Serve the food straight from the tray, with the creamy hummus!

Buckwheat carrot porridge with - lots of things
Porridge is my religion. Creamy and hearty, topped with sweet and savoury stuff!
Ever heard of brinner? That’s a word for “Breakfast for dinner”. Genius if you ask me as breakfast is a favourite and when making a hearty breakky if works for any time of the day! I know this blog is starting to look like an all porridge feed but as I really wanted to share this one, with soaked buckwheat groats and fresh ginger in it, I figured there just have to be another porridge recipe here! So, enjoy - my latest porridge craving coming up below!
Buckwheat carrot porridge with - lots of things
Serves 2
Ingredients
1 dl / 0.4 cups rolled oats
1 1/2 dl / 0.6 cups whole buckwheat groats, soaked over night or for at least 8 hours + preferably also sprouted *
3 dl / 1.2 cups water
2 dl / 0.8 cups unsweetened plant mylk of your choice
2 carrots, peel still on and finely grated
1 Tbsp fresh ginger, grated
1 tsp ground turmeric
a pinch of salt, preferably unrefined
Topping suggestions (pretty much everything works here)
kale powder (yes you read it, dried kale mixed in to a lovely powder!)
sweet cocktail tomatoes
tahini
shredded coconut
dried organic fruits and berries (such as goji berries, mulberries, apricots)
walnuts
How to
Rinse the buckwheat thoroughly. Bring oats, water, mylk, carrot, ginger and spices to a boil, let simmer for 2 minutes. Add the buckwheat and simmer for another minute. Stir every now and then to get a creamy porridge. Maybe add a bit more water/mylk to get you desired consistency. Salt to taste. Let the porridge cool slightly then top with your favourites!
* How to soak whole buckwheat groats: Put the groats in a bowl and fill with the double amount of water. Add 1 Tbsp for every 5 dl / 2 cups (this helps the soaking process). Let soak over night or for at least 8 hours. Rinse well and drain. Now your buckwheat are ready to be eating - but if you have time you can also sprout them! If so put them in a fine mesh strainer (or in a sprouting jar) and let sprout for at least 24 h, rinse with water 2 times daily until your groats grow a teensy little tail! Store, well drained, in a jar in your fridge.

Divide in two bowls. Top with sliced avocado, apple and tomatoes. Add a big spoon of tahini. Sprinkle everything with flakey salt and chia seeds - the avocado likes to get a sprinkle of pepper as well!!
Breath. Be here. Enjoy!
