Rödbetstartar med friterad potatis och sojamajonnäs

4 portioner, som förrätt

Ingredienser

500 gram rödbetor

1 msk kapris

2 tsk olivolja

1 liten fänkål

Falksalt flingsalt

Friterad potatis med ramslökssalt *

2 potatisar

naturell rapsolja till fritering, eller annan frityrolja

Falksalt flingsalt

Tips! Gör egen växtbaserad majonnäs!

Ingredienser

1 dl kikärtsspad

1 msk dijonsenap

1 msk äppelcidervinäger

2 1/2 dl neutral rapsolja

Gör såhär

Mixa kikärtsspad, senap och vinäger. Tillsätt rapsoljan i en tunn stråle under fortsatt mixande tills du får en fluffig majonnäs. Smaka av med soja.

Tips!

A beautiful - yet easy to make - dish to serve as a starter at any dinner party this summer. Filled with both flavours and textures! Make your own crispy potato - or by root chips to an even easier version.

Beetroot tartare with fried potato and soy mayonnaise

Serves 4 as a starter

Ingredients

500 grams beetroots

1 Tbsp capers

2 tsp olive oil

1 smal fennel

Falksalt flakey salt from the ocean

Fried potato with ramson salt

2 potatoes

Natural rapeseed oil for frying, or any other oil suitably for frying

Falksalt flakey salt from the ocean

1 Tbsp dried ramson (or a mix of dried parsley and chives)

Soy mayonaise

1 dl plant based mayonnaise

1-2 tsp soy

For garnishing

1 handful of fresh parsley

Zest from 1 organic lemon

How to

Pre heat the oven to 175°C.

Peel the beets. Cut in half and toss with 1 tsp oil. Put on an oven tray and and bake in the oven for about 60 minutes, until beets are completely soft - without getting crispy in the edges. Let cool.

Mix the beets with capers and 1 tsp olive oil in a food processor until crumbly. Salt to taste.

Finely shred or finely slice the fennel. Important to make as thin pieces as possible as it will do great things for the flavour and dish! Put in a bowl with ice cold water.

Wash the potatoes. Slice thinly, then cut in to thin sticks. Rinse under cold water, dry using a paper towel. Heat the frying oil until 180°C in a big saucepan, test the temperature by putting one potato slice in the oil - if it starts to bubble and fry the temperature is perfect. Add some of the potato to the hot oil and fry for about 2 minutes, stirr around every now and then, until they turn in to golden and crisp. Put the fried potato on a paper towel using a hole spoon. Do the same until you’ve fried all of your potato sticks.

Toss the fried potato with flakey salt and dried ramson.

Drain the fennel.

Divide the beet tartare on 4 plates. Add some fennel on each plate. Add small dollops of soy mayonnaise and some crispy potato. Sprinkle with parsley, ramson salt and zest some lemon.

Tips! Make your own plant based soy mayonnaise

Ingredients

1 dl chickpea water (the liquid which the chickpeas comes in when you buy pre cooked) or soy milk

1 Tbsp dijon mustard

1 Tbsp apple cider vinegar

How to

Mix chickpea water, mustard and vinegar. Add the rapeseed oil a little my little - while still mixing - until you get a fluffy mayonnaise. Add soy to taste.

Tips! Make your own ramson salt!

Blend Falksalt flakey salt from the ocean with dried ramson - or any dried herb that you like - for a nice flavoured salt to use when cooking.

Panzanella - Italiensk brödsallad

Rostat bröd i sallad - genialiskt!

Låt stå under tiden du rostar brödet.

Hacka basilikan grovt, blanda ner i salladen.

Toasted bread in a salad - genius! Here is my take on an Italian classic. Sweet tomatoes, crispy cucumber, olives, capers and a simple yet delicious rapeseed vinaigrette this is a favourite of mine! If you have time let the vegetables marinate it the vinaigrette for a couple of hours before serving - and remember to not put it in the fridge as both tomatoes and cucumber tastes much more when kept in room temperature!

Panzanella - Italian bread salad

Serves 4 as side or first course

Ingredients

500 grams tomatoes in different colors and shapes

1 cucumber

1 can (380 grams) olives

1 can (100 grams) capers

2 handfulls of fresh basil

4 slices sourdough bread

Rapeseed vinaigrette

3 Tbsp cold pressed rapeseed oil

1 Tbsp apple cider vinegar

1 small garlic clove

flakey salt and freshly ground black pepper

How to

Cut the tomatoes in halv, cut bigger ones in smaller pieces. Cut the cucumber in half, scrape out the seeds by using a spoon (keep the seeds and add to your next smoothie to minimise food waste!), then slice the cucumber on the width. Drain the olives and capers. Toss together tomatoes, cucumber, olives and capers in a bowl.

Mix together the ingredients for the vinaigrette. Toss together with the vegetables.

Pre heat the oven to 175°C. Tear the bread in to smaller pieces, toss with a drizzle of oil and a pinch of salt. Roast the bread in the oven until brown and crispy. Let cool.

Chop the basil roughly. Toss together the vegetables, bread and basil and put on a big serving plate!

For an even more hearty salad serve with 300 grams cooked chickpeas (preferably marinated in herbs and garlic) or smoked tofu. Fry the chickpeas or tofu until slightly golden before serving!

Gazpacho with celery, cucumber and crispy topping

A classic soup, here with some crispy topping, served well chilled it’s the perfect dish for any hot summers day!

My take on an Italian classic. This chilled soup can be prepared up to 3 days before serving, store in an air tight container in the fridge until serving! If so, wait with adding the parsley and do so just before serving!

2 Tbsp tomato puree

2 packages (á 400 grams) whole tomatoes

4 celery stalks

4 dried apricots

8 dl water

1 cucumber

1 Tbsp apple cider vinegar

1 handful of fresh parsley

salt and freshly ground black pepper

Topping

1/2 dl mixed seeds, for example pepitas / pumpkin seeds / sunflower seeds

1 celery stalk

1 handful of fresh parsley

salt and freshly ground black pepper

How to

Peel and finely chop the onion and garlic. Fry in a bit of water in a saucepan (preferably a cast iron one as that will add significant amounts of iron to your soup) with the ginger until soft. Pumpkin tray with pea pesto, yoghurt and fresh herbs

The idea is simple - but a veggie on a tray, bake until soft and sweet and top with pea pesto, drizzled yoghurt, seeds and some shaved red cabbage for extra crisp!

So, the the idea with this dish is to start with a veggie (preferably in season) which you bake and then top with some legume pesto/hummus/bean spread etc. Serve it as a side to your dinner, part of a buffet or add a handful of cooked or soaked grains (oats, spelt, sorghum etc) or pseudo grains (quinoa, buckwheat) to make it a filling and complete dinner!

Pumpkin tray with pea pesto, yoghurt and fresh herbs

Serves 4 as a side

Ingredients

1 butternut squash or pumpkin such as Hokkaido pumpkin *

Pea pesto

250 grams green peas

1/2 dl / 0.2 cups pepitas/pumpkin seeds

2 handfulls of fresh basil

1 Tbsp nutritional yeast

1 Tbsp cold pressed olive oil

salt and freshly ground black pepper

For serving

Cammelina seeds **

fresh basil

red cabbage, raw shaved

How to

Pre heat the oven to 175°C / 350°F. Wash and cut the pumpkin in smaller pieces (but not too small - I like to serve quite big chunks!). Put on a baking tray and bake in the oven for about 25-30 minutes until soft and sweet. When baking pumpkins, butternut squash and courgettes I usually don’t use any oil since they contain quite a lot of water as it is! However - for that extra shiny cover and some crisp brush with oil before baking in the oven.

Mix all the ingredients, except for the pumpkin seeds, for the pesto in a food processor until your preferred pesto texture. Add the pumpkin seeds and pulse a few times. Salt and pepper to taste.

Add bid dollops of pea pesto straight on top of the pumpkin, drizzle over som yoghurt and sprinkle with camelina seeds!

* Other yummy things to put on your tray could be: cauliflower, new potatoes, courgette, aubergine, carrots and sweet potatoes JUST TO MENTION A FEW. Feel free to add your favourites below!

** Camelina seeds are fiber and protein rich tiny seeds which roasted taste a bit nutty. Gives a nice texture on top of salads, crisp bread toppings or porridge! Great to add to your smoothie as well. Also I've heard it can be used as a egg replacement but never tried it - any of you who’ve done it?

Baked cabbage with shaved fennel, apple, herb oil and toasted sunflower seeds

Silky and sweet, with a herby and tangy oil + crispy fruits and veggies. This green side is a keeper, can be varied and works for every season!

This is a salad perfect for a festive buffet - or a side to any meal really! The simplicity of baked cabbage, the flavours and textures which arises when being baked is extraordinary!! It’s silky, sweet and just v.e.r.y. tasty! Drizzle the whole thing with a lovely green oil and toss with a couple of hand fulls of shaved crispy vegges and fruits for great textures and flavours - and you’re good to go!

During winter I would probably use kale (which I massage with cold pressed rapeseed oil and a pinch of salt) instead of the fennel - and when you want to vary the recipe you can use any citrus fruit instead (or together with the) of the apples. Anyhow - the cabbage is key!

Baked cabbage with shaved fennel, apple, herb oil and toasted sunflower seeds

Serves 4-6 as a side salad

Ingredients

1 cabbage (preferably fresh cabbage, or pointy cabbage)

1 fennel

2 red apples

1 dl / 0.4 US cups sunflower seeds

1 tbsp rape seed oil

fresh thyme for garnish

Herb oil

1 dl / 0.4 US cups cold pressed rapeseed oil

1 dl / 0.4 US cups fresh herbs (e.g parsley, thyme, mint)

1 garlic clove

2 tbsp apple cider vinegar

salt and freshly ground black pepper

How to

Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Cut the cabbage in pieces, drizzle with oil. Put on a baking tray and bake in the middle of the oven for 30 minutes, until the cabbage is all silky and sweet - but still have that bite to it. Let cool.

Put the sunflower seeds on a baking tray. Toast in the middle of the oven for 10 minutes, until a nutty aroma fills the kitchen. Stir around halfway through. Let cool.

Mix all the ingredients for the herb oil (I tend to use the herbs I have at home, so every herb oil gets different). Salt and pepper to taste.

Toss the cabbage with half of the herb oil. Shave the fennel and apples using a mandoline, or slice thinly using a sharp knife. Layer the cabbage, fennel and apples and most of the sunflower seeds on a serving plate. Drizzle som extra herb oil on top and sprinkle with the rest of the sunflower seeds. Garnish with fresh thyme.

Roasted carrots and parsnips with ginger tahini dressing and pomegranate

Roasted veggies are delicious whenever. Let them roast with the peel still on - gives both a great texture and extra flavour. These ones are drizzled with a favourite of mine; creamy tahini dressing!

Roasted baby carrots + baby parsnips. Drizzled with a ginger tahini dressing. And sprinkled with toasted almonds, lots of fresh herbs and fruity pomegranate seeds. Easy peasy planty side for ANY occasion!!

AND, if you want to make it a main dish you could serve with some cooked grains of your choice (quinoa, wild rice, sorghum, millet etc) and some kind of protein packed spread, for example my sweet potato and roasted garlic hummus (might be my favourite one in the world) or my Pea and cilantro hummus.

Roasted carrots and parsnips with ginger tahini dressing and pomegranate

4-6 servings, as a green side

Ingredients

500 g new season/baby carrots/carrots bought in a bunch (you could use any type of carrot really, but I find that the baby ones are even better for this recipe as I prefer to roast them whole - and with the peel on)

10 baby parsnips (see note on carrots above, same thing here)

2 dl / 0.8 US cups fresh parsley

2 dl / 0.8 US cups pomegranate seeds

1 dl / 0.4 US cups almonds

1 tbsp rapeseed oil

unrefined sea salt

Ginger tahini dressing

1/2 dl / 0.2 US cups light tahini (I prefer to use tahini made of non roasted sesame seeds as the flavour is not as sharp as if you would use a dark tahini)

3/4 dl / 0.3 US cups water

zest from 1 organic lemon + 2 tbsp freshly pressed lemon juice

1 tbsp fresh ginger, grated

unrefined sea salt and freshly ground black pepper

How to

Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Remove the carrot tops if there are any (these ones are GREAT to use in a home made pesto, smoothie or herb hummus!). Scrub the carrots and parsnips (if the peel on the parsnips is too thick you might want to peel them - otherwise it’s great to leave on).

Put the root veggies on a baking tray and drizzle with oil. Sprinkle with salt. Roast in the middle of the oven for about 35 minutes, until they are slightly golden and the peel is slightly crispy.

Put the almonds on a baking tray. Roast in the middle of the oven for about 10 minutes, until a nutty aroma fills the kitchen. Stir around halfway through. Let cool.

Mix all the ingredients for the ginger tahini dressing using a blender/immersion blender. Salt and pepper to taste.

Put the roasted veggies on a serving plate, drizzle over ALL (important part, the dressing is great) the dressing. Sprinkle with chopped parsley, almonds and pomegranate seeds. And some flakey salt!

Best,

Thess

Roasted Jerusalem artichoke and black kale with Pumpkin and apple salsa

A favourite green side with everything that you're looking for when it comes to flavour, texture and nutrition! Serve straight from the tray - that's my favourite way to gather for brunch or dinner!

A truly delicious green side to serve with your dinner or at a buffet. Scrub and wash the artichokes carefully instead of peeling them, as lots of the flavour and nutrition is in fact to be found in the peel. Plus - baked peel gives the whole dish some extra texture!

I like to serve this green side straight from the tray. Out of the oven, top with tasty salsa and ready to eat - a relaxed and family like way of serving food - just how I like it!

Roasted Jerusalem artichoke and black kale with Pumpkin and apple salsa

Serves 4-6

Ingredients

800 gram Jerusalem artichoke

100 gram black kale

1 tbsp cold pressed olive oil

Pumpkin and apple salsa

 150 gram pumpkin, peeled

2 sweet winter apples

1 shallot

1 tbsp apple cider vinegar

1 dl water

one handful of fresh cilantro

salt and freshly ground black pepper

Garnish

1/2 dl toasted hazelnuts, peeled

fresh horseradish

How to

Pre heat the oven to 200 degrees Celsius. Scrub the Jerusalem artichokes carefully and slice the bigger ones in half. Cut away the thick bottom steam part of the black kale, tear the leafs in to smaller pieces. Massage with olive oil.

Put the Jerusalem artichokes on an oven tray, drizzle with olive oil, sprinkle with salt and pepper and stir to coat. Roast in the middle of the oven for 15 minutes. Take out from the oven, stir around, add the kale to the tray and roast for another 5-10 minutes, until Jerusalem artichokes are tender and lightly golden and the black kale crispy.

Cut the pumpkin in to small pieces. Core the apple and cut in to small pieces. Finely chop the shallot. Put all the ingredients, except for the cilantro, in a small saucepan and bring to a boil. Let simmer for about 20 minutes, until a chunky salsa. Add the cilantro. Salt and pepper to taste.

Top the roasted veggies on the oven tray with dollops of salsa. Grate the fresh horseradish. Serve!

Sweet potato hummus with roasted garlic and tarragon

My favourite hummus in the world! Irresistibly creamy, sweet and kind of nutty - with a herby touch! Spread it on a seed cracker, add to your wrap or have it with a hearty salad.

Hummus, my favourite dip/spread/sauce/filling - or what ever you might call it! Except for the lovely texture and delicious flavour I really like hummus because of it's nutrition - it's a great way to add some extra protein (and fibers and vitamins and minerals!) to your plant based meal! Spread it on seed cracker, add to your wrap or have it with a hearty salad. Traditionally a hummus is made of chickpeas, but sometimes I use white beans instead - I really like the variation (food hack #1 in this post - look for easy made variations and cooking will be much more fun and simple!)!

Another way to vary your hummus is to add different veggies (like beetroot, roasted carrot, green peas, grilled bell pepper etc) and herbs - also a perfect way to match the hummus with what ever you're serving it with - or what you're craving at the moment!

In my book The new green salad I share three of my favourite hummus recipes - and one of them you find here below! It happen to be my favourite hummus in the world - irresistibly creamy, sweet and nutty at the same time - with a herby touch!

Sweet potato hummus with roasted garlic and tarragon

Yield about 5 dl

Ingredients

240 grams (about 4 dl) cooked chickpeas *

1 small sweet potato, about 250 grams

1 garlic bulb **

2 tbsp tahini (preferably the light one, made of natural sesame seeds)

1/2 dl water

12 fresh tarragon leafs, or 1 tsp dried tarragon

2 tbsp cold pressed olive oil + extra to drizzle as garnish

Himalayan salt and freshly ground black pepper to taste.

Garnish

Sesame seeds

Chili flakes

How to

Pre heat the oven to 200 degres Celsius. Peel the potato and cut in to chunks, put on a baking sheet and mix with 1/2 tbsp olive oil. Remove the outer skin from the garlic bulb, enough for you to see the garlic cloves (skin on) separately with but yet you want the whole bulb to stick together. Brush with 1/2 tbsp olive oil. Put next to the sweet potatoes and roast in the oven for 30 minutes until potatoes and garlic are soft. Let cool.

Mix water and tahini until creamy using an immersion blender or food processor. Add the rest of the ingredients (squeeze out the garlic), except for the olive oil and tarragon, mix until creamy. Add 1 tbsp olive oil and tarragon and mix to combine. Salt and pepper to taste. Drizzle with oil and sprinkle with sesame seeds and chili flakes before serving.

Tip! Make a big batch and store in a air tight container in your fridge! Then you'll be ready for snackning, brunching, dining or having guest at any time. Food hack #2 in this post. A staple in my home! Lasts up to about a week.

* Either use canned ones, or by dried and soak/cook yourself! If so, make sure to cook a big batch and put the ones you're not using for the recipe in different sized portions in your freezer! Takes about 2 seconds to take out when ever you want to use chickpeas the next time! Food hack #3 in this post)

* * YES, a whole (!) garlic bulb! After half an hour roasting in the oven it will be all soft and sweet with an almost caramelised kind of flavour. It's lovely!

Crispy kale with nori and sesame

The secret to really crispy kale will after reading this be among your most important knowledge. Kind of anyway!

Kale. I like (love) kale in every possible way you can have it. Therefore I was beyond happy yesterday when I visited the amazing Ugglarps Grönt, a renown farm shop in the southern part of Sweden where I was wandering around the unbelievable brassicas fields. There they grow not only kale but every type of brassica that you could think of. Got a lot of inspiration for the upcoming season ot say the least.

Thinking of,  and writing about, kale I wanted to share with you one of my favourite ways to have it - baked until perfectly crisp! To get the kale really crisp you need to have a little trick down your sleeve. Scroll down to read more!

Crispy kale with nori and sesame

Serves 1-6, all depending on how and when you serve it (as a Friday snack when hanging out with yourself, topping on a salad etc)

Ingredients

250 grams kale

2 tbsp cold pressed coconut oil

2 tbsp sesame seeds, preferably a mix of white and black ones

1 tbsp nori flakes

1 tsp flakey salt

How to

Preheat the oven to 200 degrees celsius.

Wash the kale and remove the stalk. Tear the leafs in smaller pieces and put on a oven tray. Dry the kale carefully (!) with a clean kitchen towel. This is the secret part, by drying the kale completely before you massage it with the oil the kale will bake and not steam, which will happen if you have wet kale. Baked kale = really crisp. Steamed kale = impossible to get crispy.

Blend sesame seeds, nori and salt. If you can't find nori flakes you can finely chop a nori sheet, or even better mix in a food processor. Massage the dry kale with coconut oil until every part is covered. Sprinkle with the sesame and nori mixture. Give it a toss.

Bake in the middle of the oven for 10-15 minutes, until the kale is crisp. Make sure to stay close as the kale can easily burn if in the oven for to long. Toss it around every now and then to get evenly crisp kale. Let cool.

Tomato salad with citrus dressing, toasted buckwheat and Thai basil

Tomatoes in all kind of shapes, colors and textures mixed into a simple tomato salad - beautiful and very delicious!

What you are now about to get the recipe for is a perfect example of how a simple vegetable can turn in to a delicious dish, with hardly any work at all. It's all about using vegetables in season, the flavour then is really rich all by itself and all you need to do is to serve and enjoy.

So, when it's season for the Swedish garden tomatoes (one of my favourites!) and you can find tomatoes in all kind of shapes, colors and textures at your local greengrocer I often make a simple tomato salad - beautiful and very delicious. This one is perfect as a starter, side salad or tapas! The sweet tomatoes goes very well the the sourish dressing, the crispy topping and the kind of sharp Thai basil. Serve on it's own, or together with some sourdough bread and sheep cheese.

Tomato salad with citrus dressing, toasted buckwheat and Thai basil

Serves 4-6

Ingredients

1 kg mixed garden tomatoes

2 tbsp freshly pressed organic grapefruit juice

2 tbsp freshly pressed organic lime juice

zest from 1 organic lemon

2 tsp tamari

1 dl Thai basil

1/2 dl buckwheat groats

1/2 dl finely chopped chives

flakey salt and freshly ground black pepper

How to

Mix citrus juice, zest and tamari with a fork to a marinade. Set aside.

Wash and slice the big tomatoes, cut the smaller ones in half. Put the tomatoes in a bowl and pour over the citrus marinade and half of the Thai basil. Let marinate for at least 15 minutes in room temperature.

Put the buckwheat in a fine mesh strainer. Bring some water to a boil and then pour over the buckwheat. Rinse with cold water and let drain for a few minutes. Toast in a dry pan, on medium heat, until golden and crisp. Let cool.

Place the tomatoes on a big flat plate. Pour over the marinade. Sprinkle the rest of the Thai basil, chives and buckwheat. Sprinkle with flakey salt and some freshly ground black pepper!

White bean dip with mushrooms and herb pesto

A simple white bean dip, topped with some pan fried mushrooms, a delicious yet simple pesto and a handful of mâche lettuce for some extra freshness.

Sometimes simplicity is what makes a dish (big or small) really good. Like with this recipe. A simple white bean dip, topped with some pan fried mushrooms, a delicious yet simple pesto and a handful of mâche lettuce for some extra freshness. Together with some seed crackers or crisp bread from my cookbook The new green salad this is really YUMMY!

I would serve this as a starter, as a side to any dinner or as a great part of a weekend brunch with family and friends! Or, as I will do later today, as a light evening snack. You can also make a big batch and store some of it in the fridge, then you have the perfect spread to your breakfast crisp bread or filling for a hearty wrap sorted out for the next couple of days.

How to

Soak and cook the white beans according to instructions on the packaning (PLAN & PREP. Make a big batch if you're in the making and keep some of it in the fridge for salads, dips or soups fillings during the next few days. Mix tahini and water in a food processor until smooth and fluffy. And the white beans and mix until smooth. Add the oil, lemon juice and tarragon. Mix until completely smooth. Salt and pepper to taste.

Brush and cut the mushrooms in quarters. Drizzle some oil in a frying pan and fry the mushrooms on medium heat until soft and lightly golden.

Carrot patties with ginger, herbs and drizzled lemon tahini dressing

The perfect party finger food, satisfying topping on a salad or filling in a wrap

These little delicious bites are easy to make, filled with nutrition and are really easy to make. They make the perfect finger food for the party, can be served as a satisfying topping on a salad or filling in a wrap. Try flavouring the patties with any herbs you prefer, I used cilantro and parsley is it was the ones I hade on my windowsill. Plus I really like them.

The tahini dressing that I drizzle over right before serving is a twist on one of the favourites from my book The new green salad, and it goes very well with the ginger and cilantro. I've made these patties vegan by using a "chia egg" (which is really 1 part chia seeds + 3 parts hot water, mixed and soaked it takes a texture similar to regular egg), if you prefer to use regular egg a medium one would be just enough.

These carrot patties will for sure be one of the staples in my fridge this summer. Make a double (or why not triple!) batch, keep some in the fridge and some in the freezer. That will make you settled for a couple of weeks! Hope you like them!

Carrot patties with ginger, herbs and drizzled lemon tahini dressing

Makes about 20 small patties

Ingredients

7 dl finely grated carrots (about 5 medium carrots)

2 stalks spring onion

2 tsp grated fresh ginger

a big handfull of fresh cilantro

a big handfull of fresh parsley

2 dl rolled oats (gluten free if gluten intolerant)

2 tbsp cold pressed olive oil

1 tbsp chia seeds + 3 tbsp hot water

2 pinches mineral salt

Lemon tahini dressing

1/2 dl light or regular tahini *

zest + freshly squeezed juice from 1 lemon (more to taste)

1/2 a garlic clove

1/2 - 1 dl water (depending on how thick you want it)

mineral salt

How to

Preheat the oven to 200 degrees Celsius. Peel and finely grate the carrots. Thinly slice the spring onions. Scrape away the peel from the ginger using a spoon, then finely grate it. Roughly chop the fresh herbs.

Put the chia seeds in a small mixing bowl. Bring 1/2 dl water to a boil (don't let it boil for to long as that will make the water evaporate, you only need to make sure the water is hot), pour over the chia seeds, stir and let sit for about 5 minutes until the mixture takes on a jelly like consistency.

Place carrots, spring onion, ginger and herbs in a mixing bowl. Add oats, olive oil, chia egg and salt. Stir well to combine. Let sit on the kitchen counter for at least 20 minutes to allow the mixture to set, this is important for the patties to hold together - and for getting the lovely texture!

Form the mixture in to about 20 small patties and put on a baking sheet. Bake in the middle oven the oven for about 15-20 minutes, until patties are firm and edges are a bit crispy.

Lemon tahini dressing: Mix together all the ingredients until a creamy dressing. Salt to taste.

Serve patties with the lemon tahini dressing and fresh herbs!

* There are also the dark tahini, made of roasted sesame seeds. I prefer the lighter one, made of plain sesame seeds, as it has a rounder and more gentle taste to it.

Semi means “half” in Italian. These little beauties are so to speak half dried and have LOTS of taste! Creamy and kind of silky, yet a bit crispy would be a good way to describe them. You can have them ready in half an hour and they go as the perfect topping om most things, are gives a wonderfully sweet touch to a green salad. Give them a try! For more quick food inspo like this, please check out my Instagram account @thereseelgquist where I update with everyday foodie inspiration.

Best, T

Semi dried cherry tomatoes

500 g cherry tomatoes (red ones or different colored)

1 tbsp olive oil

1 tbsp balsamic vinegar

a pinch of a good tasting sea salt

How to

Pre heat oven to 200 degrees Celsius. Remove the twig and cut a bunch of sweet cherry tomatoes in half. Place in a baking dish and drizzle with olive oil and balsamic vinegar (no salt here as that will drain the tomatoes!), add a pinch of natural garlic powder and give it all a good shake.

Put in oven for about 30 minutes, until tomatoes are soft and slightly crispy around the edges. Let cool, sprinkle with a good tasting sea salty.

Super easy and really yummy on ANYTHING – like crisp bread, in salads, as topping on a creamy soup, in a wrap, together with your favorite cheese etc etc.
