Saffron quinoa with brassicas, avocado and pomegranate
Golden saffron with a lovely saffron flavour tossed with a bunch of different brassica! A semi raw favourite for the festive buffet!
Here comes one of my favourite salads for the winter season. Flavours and veggies that reminds me of candlelit dinners, cosy mornings and Christmas gatherings - all tossed together in to this recipe!
If you ask me every festive buffet requires a semi raw salad - a salad where at least most of the components are raw - great thing as that will add lots of texture and freshness which goes very well with basically anything. Cook the quinoa prior to serving and massage/shave/slice/deseed the rest of the components (preferably put the brassica i ice cold water to get them really crispy!)- then just toss it all together just before serving!
Saffron quinoa with brassica, avocado and pomegranate
Serves 4-6
Ingredients
3 dl / 1.2 cups white quinoa
0.25 grams saffron, ground
100 gram kale (you might want to use black kale instead of kale if you’re pairing this one with my pumpkin tray recipe from the previous post)
50 gram red cabbage
1 fennel
1 avocado, sliced
1 pomegranate, deseeded
1 dl / 0.4 cups mixed seeds and nuts, toasted
1 Tbsp extra virgin olive oil
flakey salt
How to
Cook the quinoa according to instructions on the packaging, together with the saffron.
Cut away the thick bottom steam of the kale, tear the leafs in to smaller pieces. Since they’ll the added raw to the salad you want the pieces to be quite small. Massage with olive oil and a pinch of salt until silky.
Shred the red cabbage thinly using a mandoline, a vegetable peeler or a sharp knife. Trim the fennel bulbs, then shred thinly on the width using a mandoline/vegetable peeler/sharp knife. Put cabbage and fennel in ice cold water for 20 minutes - this will make them extra crispy!
Toss together the cooked saffron quinoa, kale, cabbage, avocado, pomegranate and seeds/nuts!

Baked cabbage with shaved fennel, apple, herb oil and toasted sunflower seeds
Silky and sweet, with a herby and tangy oil + crispy fruits and veggies. This green side is a keeper, can be varied and works for every season!
This is a salad perfect for a festive buffet - or a side to any meal really! The simplicity of baked cabbage, the flavours and textures which arises when being baked is extraordinary!! It’s silky, sweet and just v.e.r.y. tasty! Drizzle the whole thing with a lovely green oil and toss with a couple of hand fulls of shaved crispy vegges and fruits for great textures and flavours - and you’re good to go!
During winter I would probably use kale (which I massage with cold pressed rapeseed oil and a pinch of salt) instead of the fennel - and when you want to vary the recipe you can use any citrus fruit instead (or together with the) of the apples. Anyhow - the cabbage is key!
Baked cabbage with shaved fennel, apple, herb oil and toasted sunflower seeds
Serves 4-6 as a side salad
Ingredients
1 cabbage (preferably fresh cabbage, or pointy cabbage)
1 fennel
2 red apples
1 dl / 0.4 US cups sunflower seeds
1 tbsp rape seed oil
fresh thyme for garnish
Herb oil
1 dl / 0.4 US cups cold pressed rapeseed oil
1 dl / 0.4 US cups fresh herbs (e.g parsley, thyme, mint)
1 garlic clove
2 tbsp apple cider vinegar
salt and freshly ground black pepper
How to
Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Cut the cabbage in pieces, drizzle with oil. Put on a baking tray and bake in the middle of the oven for 30 minutes, until the cabbage is all silky and sweet - but still have that bite to it. Let cool.
Put the sunflower seeds on a baking tray. Toast in the middle of the oven for 10 minutes, until a nutty aroma fills the kitchen. Stir around halfway through. Let cool.
Mix all the ingredients for the herb oil (I tend to use the herbs I have at home, so every herb oil gets different). Salt and pepper to taste.
Toss the cabbage with half of the herb oil. Shave the fennel and apples using a mandoline, or slice thinly using a sharp knife. Layer the cabbage, fennel and apples and most of the sunflower seeds on a serving plate. Drizzle som extra herb oil on top and sprinkle with the rest of the sunflower seeds. Garnish with fresh thyme.

Roasted butternut squash and parsnip salad with turmeric cauliflower, shaved fennel and kale crisps
Serves 4
Ingredients
1 butternut squash
1 cauliflower
250 g parsnips
200 g kale
230 g (about 4 dl / 1.6 US cups) pre cooked chickpeas
1 fennel
1 tsp mild curry blend (choose your favourite!)
2 tsp dried cilantro
1 tbsp cold pressed olive oil
flakey salt and freshly ground black pepper to taste
Avocado mash
2 avocados
1 tbsp apple cider vinegar
a handful of fresh mint, finely chopped
flakey salt and freshly ground black pepper to taste
How to
Pre heat the oven to 175 degrees celsius / 345 degrees Fahrenheit.
Peel, remove the seeds and dice the butternut squash in 2x2 cm pieces. Tear the cauliflower in to smaller florets (and keep the light leaves - the are delicious to roast as well). Scrub the parsnips, cut in half. Rinse the chickpeas, then dry them with kitchen paper.
Cut away the thick bottom steam of the kale, tear the leafs in to smaller pieces. Massage with olive oil and a pinch of salt until silky. Put half of the kale on your serving platter, the rest is going in to the oven when about 5-7 minutes remains on the roasted veggies.
Put the butternut squash, cauliflower, parsnips and chickpeas on a baking tray (separated), drizzle with olive oil. Massage the cauliflower florets + leaves and chickpeas with the curry blend. Roast in the oven for about 20 minutes, until the veggies are slightly golden and crispy around the edges but still have that al dente taste to them. Add half of the massaged kale when 5-7 minutes remains. Toss everything with the dried cilantro once out of the oven.
Shave the fennel using a mandoline or cut thinly using a sharp knife. Peel and pit the avocado, mash, with vinegar and finely chopped fresh mint, using a fork. Salt and pepper to taste.
Layer all the ingredients on a big serving plate. Top with dollops of the avocado mash. Sprinkle with flakey salt.
Zoodles with fennel and herby avocado sauce + turmeric fried tofu
My kind of fast food - perfect for days when you want something light and nourishing for lunch or dinner - in no time at all!
Veggie spaghetti - spiralized veggies which have the same shape as spaghetti - is a favourite of mine - both because I like the taste much better then the taste of regular pasta + it's a great way to get even more nutrition in to your meal! I usually spiralize carrots, pumpkin, sweet potato, radish and courgette. The later one I'm using for this dish - but you could just as well us any of the other veggies mentioned above, or why not a mix of them!
To make nice spaghetti like strings you would need a spiralizer or a shred peeler. You could also use a regular potato peeler - but to be honest - it won't give you quite the same result as if you were using the "proper thing". If you like to make veggie spaghetti, plus shred fruits and veggies for garnish/salads, I would recommend you to get the right. Will save you time and make the cooking even more fun and efficient!
If I'm making a big batch I'm using my Westmark Spiromat which gives me long and corkscrew like strings, and when I'm on the go or just want to spiralize one carrot or so I'm using my Grovstrimlare.
When you have the right kitchen tools you can make this delicious dish in no time at all. It's my kind of fast food - perfect for days when you want something light and nourishing for lunch or dinner. You could add more veggies to make it a bigger meal - for example steamed sugar snaps and pak choi for a asian touch or maybe roasted pumpkin and crispy kale for a wintery touch. Let your mind flow!
Hope you like it!!

Zoodles with herby avocado sauce + turmeric fried tofu
4 portions
Ingredients
2 big zucchinis
1 fennel
1 red apple
270 grams firm natural tofu, organic
1 tsp grated fresh turmeric, or 1/2 tsp ground turmeric
1 tbsp grated fresh ginger, or 1 tsp ground ginger
1 tbsp tamari
Fresh Thai basil
1 tbsp cold pressed coconut oil, (flavour free)
Herby avocado sauce
2 avocados, peeled and pitted
1 garlic clove, grated
1/2-1 dl water
1 tbsp freshly squeezed lime juice
1 tbsp cold pressed coconut oil (flavour free)
2 handfulls of fresh herbs of your choice (I used Thai basil + cilantro)
salt and freshly ground black pepper to taste
For serving
crispy green leafs (mix of mache lettuce, baby spinach, rocket)
seed cracker (you find two of my best recipes in my cookbook The new green salad!!)
toasted pepitas
How to
Spiralize the zucchinis. Mandoline the fennel lengthwise, or slice very thinly using a sharp knife. Deseed and mandoline the apples. But everything in a big bowl with cold water (will make everything even more crisp) while preparing the rest.
Press the excess water out of the tofu (if I have time I prepare the tofu in the same was as I do for THIS dish). Fry in oil on medium heat until golden around the edges. Add turmeric and ginger, let fry for another minute. Add the tamari and let sink in, remove from heat.
Mix the ingredients for the avocado sauce until a smooth using an immersion blender. Add more water if it's to thick. Salt and pepper to taste.
Drain the zucchini and fennel well. Toss together with the avocado sauce. Topp with fresh herbs. Serve with the fried tofu, crispy green leafs and pepitas. And some seed crackers if you have any nearby!
Green smoothie bowl with matcha chia pudding - and all the toppings you could ask for!
Matcha-coconut-latte-but-in-a-bowl-breakky! Just as important as the filling of the bowl is the topping! That's why I cannot decide and thereby use everything I can get my hands on.
I'm a huge matcha fan. I love it in smoothies, as traditional tea, as coating on my chocolate bliss balls and - as pictured above - in my chia pudding! The combination of matcha and coconut is a really great match - especially with a naturally sweet green smoothie!
Green smoothie bowl with matcha chia pudding
- and all the toppings you could ask for!
2 portions
Green smoothie
1 big, or two small, green banana/s (peeled, sliced and frozen)
1 fennel bulb
1 avokado, peeled and pitted
1 kiwi (buy organic and keep the peel!)
2 handfuls of baby spinach
water
freshly squeezed lemon juice
Matcha chia pudding
1/2 creamy coconut milk
1 1/2 dl water
1 tsp organic matcha powder
1/2 tsp pure vanilla powder
2 1/2 tbsp chia seeds
Topping suggestions
Fresh fruits or berries (I used kiwi and mango)
fresh herbs (for example mint, lemon balm or Thai basil)
puffed quinoa
cacao nibs
hemp seeds
shredded coconut
coconut yoghurt
How to
Start with the chia pudding: Bring water and coconut milk to a boil. Pour in to a jar and whisk together with matcha powder, pure vanilla powder, a pinch of Himalayan salt and chia seeds. Wait 10 minutes and then whisk again to prevent clumping. Cover and put in the fridge for at least 30 minutes.*
Mix together the ingredients for the smoothie in a high speed blender until completely smooth. Use water, a little at a time, to get your desired consistency. Add lemon juice to taste.
Divide the chia pudding and smoothie evenly in two bowls. Top with your favourites!
* If putting your chia pudding in fridge over night you don't need to heat up the liquid first - that's just a way to make the chia seeds soak quicker.
