Häll i smeten. Grädda mitt i ugnen i 45-50 minuter, tills banankakan blivit vackert gyllene. Skär upp i fyrkanter.

1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground ginger

4 fresh dates
1/4 tsp ground cinnamon
3/4 dl water
1 pinch of flakey salt
Topping
50 g walnuts
Dried flower sprinkle, optional

Soak the cashew nuts over night, or for at least 4 hours (for a quicker version soak in boiling hot water for 30 minutes). Rinse with water and then mix until completely smooth with the rest of the ingredients in a blender.
Pre heat the oven to 175°C.

Cover the bottom in a baking tin. Grease the sides of the tin with oil. Put the batter in the pin. Bake in the middle of the oven for 45-50 minutes, until the cake is golden brown. Take out the cake the oven and let cool for 5 minutes, then turn upside down to remove from the baking tin to cool completely . Cut in to squares or any other pieces.
Toast the walnuts in a dry frying pan on medium heat until lightly golden. Let cool.

Ginger bread parsnip cake with yoghurt frosting, candied walnuts and dried lingonberries
The ultimate winter feast cake! Filled with wintery spices and topped with smooth yoghurt, sweet n’ crispy walnuts and a drizzle of maple syrup.
- In collaboration with Electrolux -
The ultimate winter feast cake! I’m using lots of flavours reminding me of winter to get that christmassy touch. Also, try switch parsnips for carrots if that’s what you have at home - or a combination of the two. A perfect way to use those last few carrots you find in the fridge.
Happy baking, and happy winter fika to you!
This Christmas I’ve partnered up with Swedish brand Electrolux to share a few of my favourite holiday baked goods (also check out my LUSSEKATTER), but also a creamy pumpkin soup with salad topping and a frothy carrot smoothie with tahini! Also I aim to inspire you to prepp your kitchen with the must-have-appliances which will help you get even more creative in the kitchen and cook even more yummy food - easy as 1 - 2 -3 . As Electrolux since their beginning have been creating products that make home life a little bit easier and a whole lot better, aims to create a better future PLUS works a lot on sustainable eating (and to inspire people to eat more plant based) it felt like a p-e-r-f-e-c-t match to team up.
You’ll see more of Electrolux and myself together throughout 2020 and I cannot wait to share it with you. And Ps. For this recipe I’ve used their Kitchen Assistant, makes baking easier for sure! Also I’ve got a green one and it’s really pretty.
Ginger bread parsnip cake with yoghurt frosting, candied walnuts and dried lingonberries
Makes 14-16 pieces
Ingredients
4 1/2 dl oat flour
2 1/2 dl oat buckwheat flour
1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground ginger
1 pinch ground cloves
1 tsp baking powder
1 tsp bicarbonate of soda
1 tsp flakey salt
2 dl oat mylk
3 msk chia seeds
3 1/2 dl parsnip, grated and loosely packed
3/4 dl maple syrup
2 1/2 dl apple mash
Candied walnuts
1 dl walnuts
1 Tbsp maple syrup
1 pinch flakey salt
For serving
Thick plant yoghurt
Dried lingonberries *, or cranberries
Dried flowers, optional
Maple syrup
How to
Mix all the dry ingredients. Bring the oat milk to a boil, remove from heat and add the chia seeds. Stir to avoid chia seeds from clumping. Let sit while you grate the parsnip.
Add parsnip to the flour mix and start your kitchen assistant to combine. Add chia seed mix, parsnip, maple syrup and apple mash.
Pre heat oven to 175°C. Line a round baking tin with baking paper in the bottom (I use a spring form pan with removable sides to make it easier to remove the cake after baking). Spread out the batter in the tin / pan. Bake in the oven for 50 minutes. Let cool.
Roughly chop the walnuts. Toast them in a dry pan on medium heat, when starting to smell nutty add the maple syrup and fry for another minute. Sprinkle with salt, remove from heat and put the walnuts on a plate. Let cool.
Top the cake with yoghurt, candied walnuts and dried lingonberries. Sprinkle dried flower on top and finish off by drizzling with maple syrup.
* Hey! Dry your own lingonberries! Toss 1 package of frozen lingonberries with 1/2 tsp rapeseed oil and put on a baking tray. Dry in the oven at 50° over night, or until dry.
Plant roast with nuts, porcini mushrooms and quinoa

Plant roast with nuts, porcini mushrooms and quinoa
Topped with kale chips and apple lingonberry compote
Serves 6-8 at a buffet
Ingredients
350 grams parsnip
300 grams celeriac
2 dl white quinoa (I use Swedish quinoa! Available online and in well-stocked eco shops)
40 grams dried porcini mushrooms or chanterelles (Same as 400 grams of fresh mushrooms. You can also use other mushrooms such as chestnut mushrooms or oyster mushrooms)
10 cm leeks
3 garlic cloves
3 sprigs of fresh rosemary, finely chopped
15 fresh sage leaves, finely chopped
150 grams of kale
1 1/2 dl almond flour
2 dl walnuts
3 Tbsp chia seeds
1 tsp flakey salt
1 pinch freshly ground black pepper
Kale Chips
100 grams of kale
1 teaspoon rapeseed oil
1 pinch of flake salt
Apple and lingonberry compote
3 red winter apples, for example Ingrid Marie
1 dl lingon, frozen works fine
For serving
Roasted almonds *
How to
Scrub the parsnips carefully. Cut the peel off the celeriac. Cut the veggies into large pieces, cook until soft in lightly salted water, for about 15 minutes. Pour off the water and let cool down. Mash until chunky
Cook the quinoa according to the instructions on the packaging. Soak the dried mushroom in hot boiled water for at least 10 minutes. Pour off the water and chop the mushroom. If you use fresh mushrooms, you just skip the soaking step and chop the mushrooms right away instead. Cut the leeks in half, finely chop and rinse carefully. Peel and finely chop the garlic. Fry the leeks and garlic in a drizzle of oil until they soften. Add mushrooms, rosemary, sage, salt and pepper and fry for a few more minutes.
Rinse and chop the kale. Chop the walnuts. Preheat oven to 200 ° C. Mix the root veggie mash, quinoa, mushroom, kale, almond flour, walnuts and chia seeds together using a wooden spoon until you get a smooth batter. Cover a bread tin with baking sheet and add the batter to the bread tin.
Bake the roast in the middle of the oven for 40 minutes, then pick up the loaf from the tin, place on a baking sheet, and bake for another 20 minutes. Let stand for 10 minutes before serving.
Kale chips: Lower the oven temperature to 125 ° C. Tear the kale into smaller pieces, remove the tough part of the stalk. Massage the leaves with oil and a pinch of salt until it gets soft and silky. Spread out on a baking sheet. Bake in the middle of the oven for 7-10 minutes, until you get crispy chips.
Apple and lingonberry compote: Dice the apples. Bring apple, lingonberry and a splash of water to a boil and let simmer until you get a smooth compote. Serve the Plant-roast topped with kale chips, apple and lingonberry compote and toasted almonds.

1 tsk flingsalt
1 krm nymalen svartpeppar
Grönkålschips
100 gram grönkål
1 tsk rapsolja
1 nypa flingsalt
Äpple- och lingonkompott
3 röda vinteräpplen, exempelvis Ingrid Marie
1 dl lingon, frysta
Till servering
Rostade mandlar *
Gör såhär
Skrubba palsternackorna noga. Skär bort skalet från rotsellerin. Skär rotsakerna i stora bitar, koka tills mjuka i lättsaltat vatten, i ca 15 minuter.
Värm ugnen too 200°C.

Golden hummus bowl with red cabbage, tahini dressed carrots and blood orange
Hummus bowl might be my favourite go to of all times. It’s the perfect creamy base to top all sorts of roasted, marinated and raw veggies and leafy greens with!
Hummus bowl might be my favourite go to of all times. It’s the perfect creamy base to top all sorts of roasted, marinated and raw veggies and leafy greens with!
Furthermore a hummus bowl can be made in so many ways. Firstly the hummus base can be made of not only chickpeas but also white beans, yellow peas, green peas and red lentils (which technically means it’s not a “real” hummus, but you get my point!) to mention a few - and you can season it with different spices; cumin/chili/turmeric/herbs are a few of my favourites.
As mentioned above the bowl can be topped with pretty much all veggies you can think of - choose what’s in season and/or what you find at home. Also, adding some nuts and raw shredded veggies gives that little extra finish the the whole thing. And add some cooked grain for an even more filling meal.
Now - let’s get cooking!
Golden hummus bowl with red cabbage, tahini dressed carrots and blood orange
Serves 4
Golden hummus base
2 packages (á 230 grams drained weight) cooked chickpeas
2 Tbsp light tahini
1 dl / 0.4 cups water
1 tsp ground turmeric
salt and freshly ground black pepper
Topping
1/2 red cabbage
400 grams carrots
100 grams kale, chopped
1 blood orange
1 handful of walnuts
Tahini dressing
1/2 dl light tahini
3 Tbsp water
2 Tbsp apple cider vinegar
1 pinch of chili flakes
salt to taste
How to
Scrub the carrots and cut in smaller pieces. Slice the cabbage. Steam* for about 10 minutes, until the veggies are soft but still have that al dente bite to them. Mix all the ingredients for the tahini dressing, salt to taste, toss with the carrots.
Rinse and drain the chickpeas. Mix tahini and water until creamy. Add the rest of the ingredients for the hummus and mix until creamy. Salt and pepper to taste.
Massage the kale with oil and a pinch of salt until soft and silky. Slice the blood orange.
Spread out the hummus in 4 bowls. Top with a handful of left greens, kale, cabbage and carrots. Top with walnuts and sprinkle some extra chili flakes.
* This time I steamed both my cabbage and carrots, both because it takes only a few minutes and I was very hungry when cooking. If you have more time, and want your cabbage and carrots to get that delicious crisp to it I’d suggest you roast them in the oven at 175 °C / 350 °F for about 25 minutes instead!

The secret berry smoothie bowl
Stepping up my Smoothie bowl game. This gorgeous thing is made of berries and cauliflower. YES, CAULIFLOWER. Super delish, easy to make and good for you!
I love smoothie bowls. Because a) they are creamy and smooth 2) you can top with tons of things you love 3) they can be done in sooo many ways!! Usually I wouldn’t make a smoothie bowl during cold winter BUT I’ve had an revelation when it comes to smoothie bowls.
After years of making them smoothie bowls I just made my first one with CAULUFLOWER as the base. It’s AWSOME! The cauliflower gives that creamy touch, but without any cauliflower taste (I love cauliflower, but probably wouldn’t appreciate it in my morning smoothie bowl). A way of making a more locally produced smoothie bowl for me where I live, since we don’t have any bananas near by. LIKE IT A LOT!
Buy your organic cauliflower, tear it in to smaller florets, steam it for 10 minutes, let it cool and then freeze it. OR buy already frozen cauliflower from the grocery store!!
Now, let’s make a smoothie bowl! And cuddle up under a duvet when eating if it’s winter outside when you read this!
Secret berry smoothie bowl
Serves 1
Ingredients
100 g steamed and frozen cauliflower
125 g mixed berries, like blueberries and raspberries
1 Tbsp seed butter or nut butter, like tahini or almond butter
1 dl / 0.4 cups unsweetened plant mylk
1 Tbsp fresh ginger, grated
1 Tbsp berry powder, optional
Topping suggestions
seasonal fruit/berries
coconut yoghurt
dried flowers
walnuts
hemp seeds
How to
Thaw the cauliflower for 10 minutes. Mix all the ingredients in a blender until REALLY creamy! Maybe add a bit more plant mylk if it’s too thick for your taste or not smooth enough. Pour in a bowl, top with your favourite things. Preferably a lot of things. ENJOY!
Veggie hash with steel cut oats and poached egg
You don't need much time to cook a nourishing and delicious meal - even for your weekday dinner. An opened mind and 20 minutes is all it takes. This quick veggie hash could look a 100 different ways depending on what veggies you have at home, and what season we're in!
A quick, and kind of twisted, version of the classic Egg fried rice! Well, not very much like egg fried rice all really, but based on the same idea of frying veggies + some grain and serve with egg.
I tend to use the veggies I have at home (or the seasonal veggies I just found at the grocery store), mix with cooked oats and serve with a poached egg. A filling and nourishing yet simple meal ready in 20 minutes!
Veggie hash with oats and poached egg
Serves 4
Ingredients
4 carrots
2 yellow beets
1/2 leek
100 gram kale, or chard - or the double amount baby spinach
4 dl steel cut oats
1 tbsp cold pressed olive oil
salt and freshly ground black peppar
Poached egg
4 egg
1 liter water
2 tbsp vinegar
1 tsp salt
Topping
Walnuts
fresh lemon balm
How to
Cook the steel cut oats according to instructions on the packaging.
Scrub the carrots, slice in to smaller pieces. Peel the beets, cut in to small chunks. Cut away the thick bottom steam part of the kale, tear the leafs in to smaller pieces. Cut the leek in half, wash carefully and finely shred.
Bring water, vinegar and salt to a boil in a medium saucepan. Crack one egg in a small cup. Lower the heat, you want the water to be simmering. Whisk a whirlpool in the water and gently slip the egg in to the center of the whirlpool. Put on a lid and let simmer for 3-4 minutes. Lift up the egg using a slotted spoon. Follow the same procedure for the rest of the eggs, one at a time.
Fry carrot and beet in a bit of oil in a frying pan or in a wok until golden och tender. Add the leek and kale and let fry for another couple of minutes. Remove from heat. Add the steel cut oats. Salt and pepper to taste.
Serve the fry with walnuts, lemon balm and poached egg.
