Creamy celeriac and parsnip soup with almond and parsley

A creamy and warming soup, with a topping which adds both texture and heartiness. Works both for festive dinners and leftover meals!

(Recipe in Swedish below)

Another favourite soup!

I always serve my soups with a yummy “topping salad” for extra texture, flavour and heartiness. A smart thing is to use bits from the soup also on top of if - as in if making a celeriac and parsnip soup like here, but some extra celeriac or parsnip, roast in until lightly crispy and add to the topping salad. My typical topping salad formula would be:

200 gram veggie (same as in the soup) + 1-2 flavours (could be spices, herbs or nut butters) + something crunchy (such as toasted nuts or seeds)

Happy cooking!

Creamy celeriac and parsnip soup with almond and parsley

Serves 4

Ingredients

500 grams celeriac

200 grams parsnip

1 yellow onion

2 garlic cloves

1,2 liter vegetable stock

2 Tbsp almond butter

1 handfull fresh parsley

2 tsp apple cider vinegar

olive oil

Salt and freshly ground black pepper

Topping salad

1 1/2 dl wild rice, or any other cereal such as quinoa / millet / sorghum / spelt / whole wheat (if you have any leftovers at home this is the perfect way to use it. Also, you can use any type of legumes instead, story bought pre-cooked works great!)

200 grams celeriac

1 handful almond flakes

cress

olive oil for roasting

cold pressed olive oil for drizzling

salt and freshly ground black pepper

How to

Start by making the topping salad if you need to cook some wild rice as it takes about 40 minutes. If using already cooked cereals / leftovers or pre-cooked legumes you can do this part when the soup is simmering.

Pre heat the oven 200°C. Cook the wild rice according to instructions on the packaging. Scrub the celeriac carefully, cut in small pieces. Toss with oil and roast in the oven until soft, about 15 minutes. Add the almond flakes the last minute. Toss together wild rice, celeriac and almond. Chop the parsley and add it too. Salt and pepper to taste.

Peel and finely chop onion and garlic, fry in a bit of oil in a saucepan until soft. Scrub the root veggies carefully, cut away any dirty parts and cut the rest in smaller pieces. Add veggies, almond butter and vegetable stock to the saucepan. Bring to a boil and let simmer until veggies are soft, about 15 minutes. Remove from heat, mix until smooth using an immersion blender. Add parsley and vinegar and pulse a few times. Salt and pepper to taste.

Serve the soup topped with the salad and cress. Drizzle with oil.

Rosta i ugnen tills mjuka, ca 15 minuter. Låt mandelflanen rosta med sista minuten. Blanda vildris, rostad rotselleri och mandelflarn. Finhacka persiljan och blanda ner. Smaka av med salt och peppar.

Servera soppan toppad med salladen och krasse. Ringla över kallpressad olivolja - gärna en smaksatt!

1 dl kimchi

1 dl oat flour

1 dl chickpea flour

2 dl water

2 handfuls of parsley, chopped

1/2 tsp salt

rapeseed for frying

Tahini and ginger sauce

2 Tbsp tamari

1 Tbsp apple cider vinegar

2 cm grated ginger, fresh

Shred the cabbage. Cut the leek in half, slice thinly and rinse carefully. Put cabbage and leeks in a bowl and massage with a pinch of salt. Set aside for 10 minutes. Finely chop the kimchi.

Whisk together the flour and water in a separate bowl. Add the cabbage, leek and kimchi. Stir together. Add the parsley, let sit for 10 minutes.

Mix together the ingredients for the dressing in a blender or using a hand mixer, salt to taste.

Heat a drizzle of oil in a frying pan. Add a spoonful of cabbage mixture and press down lightly. Fry on medium heat for a couple of minutes, until golden, then flip around and fry for another minute on the other side too. Do the same with the rest of the mixture.

Serve the fritters with sprouts, pear, sprinkled sesame seeds and a good drizzle of the tahini ginger sauce!

//

Ställ åt sidan i 10 minuter. Strimla kimchin.

Vispa ihop mjöl och vatten i en separat bunke. Vänd ner kål, purjo och kimchi och blanda ihop väl. Vänd ner den hackade persiljan och rör om. Låt stå i 10 minuter.

Herby potato mash with green pea tempeh and courgette stir fry, tahini beet dressing and crispy salad

Potato + rapeseed + herbs = true love. Instead of mixing my potatoes to a smooth mash I like to keep it quite chunky. Serve with a super simple stir fry and a dressing to always remember!

Potato + rapeseed + herbs = true love. Instead of mixing my potatoes to a smooth mash I like to keep it quite chunky. Serve with a super simple stir fry and a dressing to always remember! It actually feels a bit strange (yet awesome) to drizzle over such a colourful thing over your food! Try for yourself!

Herby potato mash with green pea tempeh and courgette stir fry, tahini beet dressing and crispy salad

Servers 4

Herby potato mash

400 grams new potatoes or small potatoes

1 Tbsp cold pressed rapeseed oil

1 organic lemon, zest + juice

2 handfulls fresh parsley

flakey salt and freshly ground black pepper

Green pea tempeh and courgette stir fry

250 grams green pea tempeh (or any tempeh of your choice) *

1 big courgette

2 spring onions

1 tsp cold rapeseed oil

1 Tbsp tamari, or any other soy sauce

cress

flakey salt and freshly ground black pepper

Tahini beet dressing

1 raw beetroot

1/2 dl / 0.2 cups light tahini (I like to use the light one for dressings rather then the darker one - made of toasted sesame seeds - as the dark one can taste a bit sharp)

3/4 dl / 0.3 cups water

1 Tbsp apple cider vinegar

1 tsp maple syrup

sesame seeds and dried flowers for garnish

flakey salt and freshly ground black pepper

Crispy salad

70 grams mixed leafy greens

1 handfull of radish

50 grams red cabbage

1 Tbsp toasted rapeseeds

How to

Scrub the potato, cut bigger ones in half. Boil potatoes until soft, takes about 15-20 minutes. Drain then mash with oil and lemon by hand using a potato masher until your preferred texture. Chop the parsley roughly and add to the mash. Salt and pepper to taste.

Crumble the tempeh. Slice the courgette and spring onion. Fry courgette and onion in a bit of oil until soft. Add the tempeh and fry for another few minute until it get a nice golden color. Pour over the tamari and let in sink in. Remove from heat. Salt and pepper to taste. Garnish with cress.

Peel the beetroot, cut in smaller pieces. Mix with rest of the ingredients for the dressing in a high speed blender or food processor until completely smooth. If you don’t have a high speed blender it might be a good idea to grate the beetroot before mixing it all together as that will help getting a smoother dressing. Salt and pepper to taste. Add more water for a more runny dressing.

Slice the radish and red cabbage thinly. Toss together with the leafy greens, drizzle with some cold pressed rapeseed oil and sprinkle with rapeseeds.

Serve the mash with the stir fry, dressing and crispy salad!

Enjoy!

  • Tempeh is traditionally made of soy beans which is fermented and, furthermore tempeh often comes in small blocks, similar to but more firm then for example tofu. Now days you can find a few different types of tempeh in many supermarkets and organic stories.

Vindaloo masala daal with carrots and spinach + courgette raja with mint

From a tiny man selling his home mixed spice blends in a small town in India - to my kitchen, and soon maybe yours as well! This is a lentil daal like no else, with a secret trick to make it creamy as ever!

This recipe is inspired by a man with a spice mix stand in the small village Agonda in the Indian province Goa. He told me he made the best home made masala there is. Unfortunately I didn’t get to try his version - but tried my very best to remember each and every word he said when he explained how to make it. The result is right here below!

Vindaloo masala daal with carrots and spinach + courgette raja with mint

Serves 4-6

Ingredients

1 yellow onion

1-2 Tbsp vindaloo curry (to taste)

1 Tbsp ground turmeric

2 garlic cloves

1 aubergine

400 grams crushed tomatoes

8 dl / 3 1/3 cups water

3 dl / 1.2 cups red lentils

400 grams carrots

8 dried organic apricots

1 handful of fresh parsley + extra for serving

100 grams organic fresh baby spinach

2 Tbsp cold pressed coconut oil

salt and freshly ground black pepper

Courgette raja with mint

1/2 courgette

5 dl / 2 cups natural unsweetened plant yoghurt

1 handful of fresh mint

1 pinch of chiliflakes

salt och freshly ground black pepper

How to

Peel and finely chop the onion and garlic. Peel the aubergine and cut in to pieces. Heat the coconut oil over medium heat in a large saucepan. Add the vindaloo mix, turmeric, onion and garlic. Fry until fragrant and the onion has soften. You might want to add 1-2 Tbsp of water if it feels too dry.

Add aubergine, tomatoes and water. Bring to a boil and let cook for 10 minutes, until the aubergine is soft. Mix everything until smooth using an immersion blender.

Scrub and slice the carrots. Chop the apricots. Add to the saucepan together with lentils. Bring to a boil and let simmer for 20-25 minutes, until you get a very creamy daal. Maybe add a bit more water if it feels too dry. Remove from heat and add the parsley and spinach. Salt and pepper to taste.

Let the daal sit for at least 20 minutes before servering. Serve with extra spinach and rajta only, or with both + some wild rice/black rice/brown rice!

Winter stir fry with chanterelles, brassicas, Jerusalem artichokes and green pea and spinach dip

A filling stir fry served with a creamy dip for extra heartiness and flavour! This is no doubt my favourite way to cook!

Stir fries - one of the worlds easiest and maybe quickest ways to cook! Use whatever plants you have at home and let that be the base of you fry! I like to use a wok pan because I find it easier to give it all a good toss and shake with that pan - but of course you could use just any. Most important thing is - just get cooking!

Winter stir fry with chanterelles, brassicas, Jerusalem artichokes and green pea and spinach dip

Servers 4

Ingredients

2 dl / 0.8 cups wild rice, uncooked *

600 grams mixed types of mushrooms, I used chanterelles and oyster mushrooms **

500 grams mixed Brussels sprouts and/or flower sprouts (or, use any typ of Brassica such as dino kale/kale/Savoy cabbage)

250 grams Jerusalem artichokes

1 handful of fresh parsley

cold pressed coconut oil for frying

salt and freshly ground black peppar

Green pea and spinach dip

500 grams green peas, frozen thawed

100 grams organic baby spinach, fresh

1 handful of fresh cilantro

1 garlic clove

2 Tbsp light tahini

1 Tbsp apple cider vinegar

Salt and freshly ground black pepper

How to

Cook the wild rice according to instructions on the packaging. Let cool.

Brush the mushrooms, tear in to smaller pieces. Cut away the very bottom part of the Brussels sprouts and flower sprouts if necessary. Cut the bigger ones in half. Scrub the Jerusalem artichokes carefully, slice thinly.

Stir fry the Brussels sprouts and flower sprouts for 5 minutes in a tiny amount of oil (we want to keep it all fresh and light!) for 5 minutes. Add the mushrooms, Jerusalem artichokes and stir fry until it’s looks nice and gets a bit of golden coloured. Remove from heat. Salt and pepper to taste.

Mix all the ingredients for the dip. Salt and pepper to taste.

Serve the stir fry with with some wild rice and a good dollop of green pea spinach dip, sprinkle with parsley.

* If you cannot find wild rice any cooked whole grain will work!

** If you cannot get hold of fresh mushrooms of your liking dried (then soaked) or frozen ones works too!

Roasted carrots and parsnips with ginger tahini dressing and pomegranate

Roasted veggies are delicious whenever. Let them roast with the peel still on - gives both a great texture and extra flavour. These ones are drizzled with a favourite of mine; creamy tahini dressing!

Roasted baby carrots + baby parsnips. Drizzled with a ginger tahini dressing. And sprinkled with toasted almonds, lots of fresh herbs and fruity pomegranate seeds. Easy peasy planty side for ANY occasion!!

AND, if you want to make it a main dish you could serve with some cooked grains of your choice (quinoa, wild rice, sorghum, millet etc) and some kind of protein packed spread, for example my sweet potato and roasted garlic hummus (might be my favourite one in the world) or my Pea and cilantro hummus.

Roasted carrots and parsnips with ginger tahini dressing and pomegranate

4-6 servings, as a green side

Ingredients

500 g new season/baby carrots/carrots bought in a bunch (you could use any type of carrot really, but I find that the baby ones are even better for this recipe as I prefer to roast them whole - and with the peel on)

10 baby parsnips (see note on carrots above, same thing here)

2 dl / 0.8 US cups fresh parsley

2 dl / 0.8 US cups pomegranate seeds

1 dl / 0.4 US cups almonds

1 tbsp rapeseed oil

unrefined sea salt

Ginger tahini dressing

1/2 dl / 0.2 US cups light tahini (I prefer to use tahini made of non roasted sesame seeds as the flavour is not as sharp as if you would use a dark tahini)

3/4 dl / 0.3 US cups water

zest from 1 organic lemon + 2 tbsp freshly pressed lemon juice

1 tbsp fresh ginger, grated

unrefined sea salt and freshly ground black pepper

How to

Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Remove the carrot tops if there are any (these ones are GREAT to use in a home made pesto, smoothie or herb hummus!). Scrub the carrots and parsnips (if the peel on the parsnips is too thick you might want to peel them - otherwise it’s great to leave on).

Put the root veggies on a baking tray and drizzle with oil. Sprinkle with salt. Roast in the middle of the oven for about 35 minutes, until they are slightly golden and the peel is slightly crispy.

Put the almonds on a baking tray. Roast in the middle of the oven for about 10 minutes, until a nutty aroma fills the kitchen. Stir around halfway through. Let cool.

Mix all the ingredients for the ginger tahini dressing using a blender/immersion blender. Salt and pepper to taste.

Put the roasted veggies on a serving plate, drizzle over ALL (important part, the dressing is great) the dressing. Sprinkle with chopped parsley, almonds and pomegranate seeds. And some flakey salt!

Best,

Thess
