Vintersallad med pumpa, grönkål och kikärtor
Vintersallad med pumpa, grönkål och kikärtor
4 portioner
Ingredienser
2 1/2 dl havreris
1 knivsudd saffran
1 matpumpa
150 gram grönkål och eller purpurkål
2 förpackningar kokta kikärtor
2 msk kallpressad olivolja
1 granatäpple
2 1/2 dl växtbaserad yoghurt
1/2 dl pumpakärnor
Salt

Whole oats cooked with saffron, baked pumpkin, lightly crispy chickpeas and kale chips! This is what my dinners look like most days - a tray filled with what’s in season (and what’s found at home) served with cooked cereals and any kind of legumes; cooked beans / lentils / peas or tofu / tempeh. Easy, quick and really delicious!
This is a dish to save as inspiration for many meals to come!
Winter salad with butternut squash, kale and chickpeas
Serves 4
Ingredients
2 1/2 dl whole oats (par bioled - I use what we in Sweden call “oat rice”, whole oat kernels which cooks in 10 minutes)
1 tiny pinch of saffron
1 butternut squash or pumpkin
100 grams kale
2 packages of pre cooked chickpeas
olive oil
1 pomegranate
2 1/2 dl plant-based yoghurt
1/2 dl pumpkin seeds, toasted
salt
How to
Cook the whole oats according to instructions on the packaging, with saffron.
Pre heat the oven to 200°C. Half the butternut squash and scoop out the seeds, cut the rest in smaller pieces. Put on a baking tray and brush with oil. Drain and rinse the chickpeas, dry and toss together with a drizzle of oil and a pinch of salt. Put on the baking tray with the pumpkin. Bake in the oven for 15 minutes, until pumpkin is soft and chickpeas lightly golden.
Wash and tear the kale in smaller pieces, remove the rough stalk. Missade leaves with a drizzle of oil and a pinch of salt until soft and silky. Add half to the tray and bake for another 5 minutes.
Cut away the botton and top from the pomegranate. cut along the inner “walls” of the pomegranate, from the topp to the bottom - to be able to break the whole pomegranate in to wedges. Then, in a bowl, poke out the pomegranate seeds.
Add cooked whole oats and the rest of the kale to the baking tray. Add dollops of yoghurt pomegranate seeds and toasted pumpkin seeds.
Swedish plant “lussekatter” with creamy saffron date filling
My twist on a Swedish classic. A must in my home during winter time! I fill my saffron buns with a creamy date and saffron filling,
- In collaboration with Electrolux -
My best recipe on a Swedish classic! I’ve always loved this not-too-sweet-saffron-infused-soft-and-raisin-packed-bun and was very thrilled to take these ones out of the oven after years of trying different recipes and methods. I also tried to use sourdough instead of yeast and it worked out perfectly, just needs a bit more (like 24 hours) time to rise. So the classic bun normally hasn’t got any filling - however I find that they get even (!) better with a creamy, sweet and saffrony filling so that’s what you find right here!
If you have time blend the saffron with 1 Tbsp maple syrup at least 1 day before for an even more intense saffron flavour!
This Christmas I’ve partnered up with Swedish brand Electrolux to share a few of my favourite holiday baked goods, but also a creamy pumpkin soup with salad topping and a frothy carrot smoothie with tahini! And to inspire you to prepp your kitchen with the must-have-appliances which will help you get even more creative in the kitchen and cook even more yummy food - easy as 1 - 2 -3 . As Electrolux since their beginning have been creating products that make home life a little bit easier and a whole lot better, aims to create a better future PLUS works a lot on sustainable eating (and to inspire people to eat more plant based) it felt like a p-e-r-f-e-c-t match to team up.
You’ll see more of Electrolux and myself together throughout 2020 and I cannot wait to share it with you. Until then - let’s bake some Lussekatter buns! And Ps. For this recipe I’ve used their Kitchen Assistant, making lussekatter have never been easier! Cannot wait to bake my first sourdough using it, but that’s another blog post. Now - LUSSEKATTER!
Swedish plant “lussekatter” with creamy saffron date filling
Makes about 14 buns
Ingredients
25 grams fresh yeast
75 grams cold pressed neutral coconut oil, melted (or any other neutral oil)
2 1/2 dl oat mylk, or any plant mylk you like
3/4 dl coconut sugar
1/2 tsp salt
8 dl white spelt flour, about 450 grams
1/2 grams ground saffron
Saffron date filling
150 grams fresh dates, pitted
30 grams cold pressed neutral coconut oil, melted (or any other neutral oil)
1/2 grams ground saffron
1 pinch mineral salt
For brushing
Maple syrup
How to
Soak the dates in boiled hot water, set aside.
Sprinkle the yeast in your kitchen assistant baking tin. Heat oat mylk, coconut oil, saffron, sugar and salt in a pot until 37°C. Pour the saffron-infused mylk over the yeast and start your machine to dissolve.
Add half of the flour and on low speed start to knead the dough. Add more flour, and keep kneading to incorporate the flour after each addition. Add flour until the dough is little sticky when touching it, but does not completely stick to your hands.
Add a lid or a kitchen towel on top of the baking tin and set the dough aside in a warm place for 1 1/2 hours, until the dough has doubled in size.
Mix together the ingredients for the filling until smooth.
Put the dough on your countertop. Fold it a few times then roll out until you get a big rectangle. Spread out the filling on the dough and fold from one side (on the length) to the other, so you get a double dough with a sticky inside. Cut about 14 “strips” on the width. Form each strip to the classic lussekatt S-shape by curling each side until you get a tight S. Put on a baking tray and cover with a kitchen towel and let rise for another 20 minutes.
Pre heat the oven to 225°C. Brush the lussekatter buns with maple syrup. Then bake them in the middle of the oven for about 8-10 minutes, until the buns are golden brown. Let cool on a cooling wrack with a towel on top.
Enjoy when freshly baked, or freeze to thaw when serving.

Plant bouillabaisse with kale and rapeseed aioli
Serves 4
Inspired by a classic bouillabaisse this my take on a soup-meets-stew which you can serve both as a middle-of-the-week dinner and during festive holidays. Drizzle the soup with a lovely coloured rapeseed aioli and the soup is ready to serve!
Ingredients
10 cm leeks
2 garlic cloves
1 tsp fennel seeds
1/2 tsp cumin seeds
1/2 grams saffron, ground
4 carrots
1/2 celeriac
2 Tbsp tomato puree
14 dl vegetable stock
150 grams fresh kale
2 packages (á 230 grams rinsed weight) pre cooked small white beans or chickpeas
1 Tbsp apple cider vinegar
1 handful of fresh parsley
flakey salt and freshly ground black pepper
Rapeseed aioli
1 Tbsp dijon mustard
1 Tbsp apple cider vinegar
1 dl organic unsweetened soy mylk (or 1 dl of the aquafaba from a package of precooked chickpeas)
1 pinch of flakey salt
2 - 2 1/2 dl cold pressed rapeseed oil
1 small garlic clove
For serving
chiliflakes
fresh parsley, chopped
How to
Cut the leek in half, finely chop and then rinse carefully. Peel and finely chop the garlic. Fry leek, garlic, fennel seeds, cumin seeds and saffron in a pot in a drizzle of oil until soft.
Scrub the carrots and cut in smaller pieces. Scrub the celeriac (first cut away the root part, if there is any left, as it’s often quite dirty), cut in smaller pieces. Add carrots and celeriac to the pot together with the tomato puree. Add the vegetable stock and bring to a boil. Simmer for about 15 minutes, until the root veggies have soften but still got that bite to them. Drain and rinse the white beans. Add to the stew. Chop the parsley. Add to the stew together with the vinegar. Salt and pepper to taste. Chop the kale and add to the stew. Remove from heat.
Rapeseed aioli: Mix together dijon mustard, vinegar, soy milk and salt using an hand mixer or blender. Then VERY slowly drizzle in the oil while still mixing. Suddenly the mixture will thicken, and then you’ve got a mayonnaise! Peel and finely grate the garlic, add the the mayonnaise and mix one agan. Salt to taste.
Serve your soup drizzled with the rapeseed aioli, chili flakes and fresh parsley!

Creamy pumpkin saffron porridge with cinnamon apples, yoghurt, date caramel and crispy buckwheat
A porridge inspired by yummy things warming up the chilly autumn
(recept på svenska längre ner)
- In paid collaboration with Fiskars -
A porridge inspired by yummy things warming up the chilly autumn, created together with the brand Fiskars and their new line Norden Steel (read more about why they make cooking even more fun below!). A porridge made of steel cut oats get a really nice al dente-taste to it, and by adding some gated veggies the porridge gets even more hearty. Try switching the pumpkin for carrots or parsnips for some variation, and also the topping can look in a million different ways! Something that you probably never wanna miss though is the c.i.n.n.a.m.o.n. f.r.i.e.d. a.p.p.l.e.s. They are the easiest thing to make yet one of my favourite things. Other than topping my porridge I also serve It with yoghurt and granola, pancakes, waffles or why not with a roasted Pumpkin and brussels sprout salad!
When I make date caramel and crispy buckwheat I make extra of everything - the date caramel stays well for weeks in the fridge, and the buckwheat for months in room temperature!

2 portioner
Ingredienser
3/4 dl krossad havre eller korn, blötlagda över natten eller minst 8 timmar
2 dl riven matpumpa, exempelvis Hokkaido eller Butternut
3 dl vatten
1 dl havredryck
1/2 tsk malen kardemumma
1 krm malen nejlika
1 knivsudd malen saffran
1 nypa flingsalt
Kanelstekt äpple
1 svenskt äpple
1 tsp rapsolja
1/2 tsk malen kanel
1 tsk lönnsirap (valfritt)
Dadelkaramell
10 färska dadlar, urkärnade
1/2 dl vatten
1 nypa flingsalt
Krispigt bovete
2 dl torkat helt bovete
1 tsk malen gurkmeja
1/2 tsk malen ingefära
1/2 tsk malen nejlika
Till servering
Växtbaserad yoghurt
Torkade blommor
Gör såhär
Blötlägg krosset över natten i dubbel mängd vatten.
Fördela gröten i två skålar. Toppa med kanelstekt äpple och en klick yoghurt. Ringla över lite dadelkaramell och strö över krispigt bovete. Garnera med bovete.
