Plant sushi with brown rice and yummy fillings

Everything is okay in sushi making, if you ask me. Fill your rolls with what every you love and everything will be alright. Here are a few of my favourites!

The perfect thing to make during a dinner with friends, prepare all the fillings (or whatever fillings you fancy today) and sit down together to make your rolls! However - these rolls I made a not-at-all-ordinary week day when I came of and found some leftovers in the fridge. So, it works very well for 1 person meals too!

Plant sushi with brown rice and yummy fillings

Makes about 60 pieces

Ingredients

6 nori sheets

6 dl brown rice

1/2 tsp salt

Filling 1 - Tahini dressed black kale / red cabbage / pickled ginger / avocado

100 grams black kale

1 Tbsp light tahini

1 Tbsp water

salt to taste

100 grams red cabbage

1 fresh ginger

1/2 dl apple cider vinegar

1/2 dl water

1/2 avocado

Filling 2 - Pickled carrot / black garlic hummus / chives / apple / avocado

2 carrots

1/2 dl apple cider vinegar

1/2 dl water

1 can (á 230 grams drain weight) pre cooked chickpeas

1 Tbsp light tahini

1/2 dl water

2 black garlics (fermented garlic, can be bought in delis and online. If you cannot find black garlic you can bake a regular garlic bulb instead and use a few cloves from that one, se notes in the end of the recipe *)

salt to taste

1 pinch of chives

1 red apple

1/2 avocado

For serving

Furikake (Japanese spice blend. I developed a blend for my friends at GRANIT. You can also make your own; blend 2 Tbsp white and 2 Tbsp black sesame seeds, 1 Tbsp dried chives, 1 Tbsp nutritional yeast, 2 Tbsp dried seaweed and 1 tsp flakey salt)

Tamari / soy sauce

green pea tempeh (stir fried tempeh / tamari / fresh parsley)

cucumber salad (slices cucumber / tamari / chili flakes)

How to

Rinse the rice in cold water a couple of times. Then add new water (I good help is to always have about 2 centimeters between the uncooked rice and the water surface in your pot, the rice always gets perfect that way!), salt and bring to a boil. Simmer until rice is ready. Let cool.

Filling 1) Remove the tough steam from the black kale, chop the rest in smaller pieces. Whisk together tahini, water and salt. Toss around with the black kale. Finely shred the red cabbage. Scrape off the ginger peel using a small spoon. Cut the ginger in thin slices. Bring vinegar and water to a boil, add the ginger, remove from heat, put on a lid and let sit for minimum 20 minutes. Peel and deseed the avocado, and slice it thinly.

Filling 2) Scrub the carrots and slice thinly - OR preferably use one of my favourite kitchen tools; a julienne peeler to get thin strips in seconds. Bring vinegar and water to a boil, add the carrot, remove from heat, put on a lid and let sit for minimum 20 minutes. Rinse the chickpeas. Mix all the ingredients for the hummus together using a mixer or food processor, until smooth. Salt to taste. Slice the apple thinly. Peel and deseed the avocado, and slice it thinly.

Put a nori sheet on a clean kitchen towel. Top a nori sheet with a layer of cooked brown rice, leaving about 1 centimeter at either of the short sides, and flatten gently. Wet your fingers in dipping water if rice starts to stick to your fingers when pressing down on the sheet. Place the filling at the middle of rice (on the width). Then start to roll the whole thing together by folding in the side where you have rice all the way out. Continue to roll together, hold the filling down using your fingers, and keep a gentle pressure on the roll during the whole rolling (you’ll get help from the kitchen towel here, traditionally you’d use a bamboo mat but if you don’t have one a towel work fine). Put som water on the free part of the nori sheet and roll together, this with make the nori sheet to stick together. Do the same thing with the rest of the sheets / rice / fillings. Slice the rolls in 10 pieces / roll.

  • Whole baked garlic. Remove the outer layer ot the garlic peel, however you still want the bulb to stick together. Brush with oil all around and bake in the oven at 175°C for about 30 minutes. Let cool and then press out the smooth garlic. When baked the garlic get’s a lighter taste to it, so you can use more cloves then if you were using raw. I often have a whole baked garlic when makes for example hummus!

Fresh springrolls with strawberries, crispy vegetables and almond sauce

For the smaller buffet or your Friday dinner with friends and friends! Crispy rolls, filled with lots of flavours, colors and textures - served with a creamy almond sauce with a hint of ginger!

These yummy rolls could work either as the perfect family weekend feast, or when making a smaller buffet as a perfect buffet dish! When servering them during a dinner I like to prepare all the ingredients and then let the guests fill their own rolls - when serving them on a buffet I like to put them (as in the while roll) in salad leaves to make it easier for the guests to have them standing as well - perfect for a mingle party!

And oh - I should also mention that they are perfect for any day of the week too, just fill your rice papers with whatever leftovers you might find at home!

Now, let’s get rollin’!

Fresh springrolls with strawberries, crispy vegetables and almond sauce

12 portions on a buffet

Ingredients

12 small rice papers, or 6-12 bigger ones

125 grams fresh (Swedish) strawberries

1/2 cucumber

2 carrots

100 grams red cabbage

70 grams fresh spinach

250 grams smoked organic tofu

50 grams sprouts

12 fresh mint leaves

Mandelsås

1 dl mandelsmör

1 1/2 water

2 msk apple cider vinegar

1 tsp ginger, grated

salt and freshly ground black pepper

For serving

Fresh mint

camelina seeds, or sesame seeds

sprouts

How to

Slice the strawberries and all the vegetables thinly lengthwise. Cut the tofu in 12 pieces on the length.

Fill up a pie form / sauce pan or anything as big as the diameter of the rice papers with hot water. Dipp one paper at a time in the water for 10-15 seconds then put on a wet cutting board. Add a bit of the strawberries / veggies / tofu at the bottom part of the rice paper. Fold the sides inward, then tightly roll the rice paper, beginning at the end where you put the filling. Repeat with remaining rice papers and filling. Put on a big plate, and cover with a damp kitchen towel if not serving them straight away to keep them from drying. Make sure not to put them on top of each other as that might make them stick to each other, if you want to serve them on top of each other first put them in a salad leaf!

Mix together the ingredients for the almond sauce. Salt and pepper to taste.

Serve the rolls topped with mint and camelina seeds with extra sprouts on the side, and the almond sauce.

Pumpkin tray with pea pesto, yoghurt and fresh herbs

The idea is simple - but a veggie on a tray, bake until soft and sweet and top with pea pesto, drizzled yoghurt, seeds and some shaved red cabbage for extra crisp!

So, the the idea with this dish is to start with a veggie (preferably in season) which you bake and then top with some legume pesto/hummus/bean spread etc. Serve it as a side to your dinner, part of a buffet or add a handful of cooked or soaked grains (oats, spelt, sorghum etc) or pseudo grains (quinoa, buckwheat) to make it a filling and complete dinner!

Pumpkin tray with pea pesto, yoghurt and fresh herbs

Serves 4 as a side

Ingredients

1 butternut squash or pumpkin such as Hokkaido pumpkin *

Pea pesto

250 grams green peas

1/2 dl / 0.2 cups pepitas/pumpkin seeds

2 handfulls of fresh basil

1 Tbsp nutritional yeast

1 Tbsp cold pressed olive oil

salt and freshly ground black pepper

For serving

Cammelina seeds **

fresh basil

red cabbage, raw shaved

How to

Pre heat the oven to 175°C / 350°F. Wash and cut the pumpkin in smaller pieces (but not too small - I like to serve quite big chunks!). Put on a baking tray and bake in the oven for about 25-30 minutes until soft and sweet. When baking pumpkins, butternut squash and courgettes I usually don’t use any oil since they contain quite a lot of water as it is! However - for that extra shiny cover and some crisp brush with oil before baking in the oven.

Mix all the ingredients, except for the pumpkin seeds, for the pesto in a food processor until your preferred pesto texture. Add the pumpkin seeds and pulse a few times. Salt and pepper to taste.

Add bid dollops of pea pesto straight on top of the pumpkin, drizzle over som yoghurt and sprinkle with camelina seeds!

* Other yummy things to put on your tray could be: cauliflower, new potatoes, courgette, aubergine, carrots and sweet potatoes JUST TO MENTION A FEW. Feel free to add your favourites below!

** Camelina seeds are fiber and protein rich tiny seeds which roasted taste a bit nutty. Gives a nice texture on top of salads, crisp bread toppings or porridge! Great to add to your smoothie as well. Also I've heard it can be used as a egg replacement but never tried it - any of you who’ve done it?

Golden hummus bowl with red cabbage, tahini dressed carrots and blood orange

Hummus bowl might be my favourite go to of all times. It’s the perfect creamy base to top all sorts of roasted, marinated and raw veggies and leafy greens with!

Hummus bowl might be my favourite go to of all times. It’s the perfect creamy base to top all sorts of roasted, marinated and raw veggies and leafy greens with!

Furthermore a hummus bowl can be made in so many ways. Firstly the hummus base can be made of not only chickpeas but also white beans, yellow peas, green peas and red lentils (which technically means it’s not a “real” hummus, but you get my point!) to mention a few - and you can season it with different spices; cumin/chili/turmeric/herbs are a few of my favourites.

As mentioned above the bowl can be topped with pretty much all veggies you can think of - choose what’s in season and/or what you find at home. Also, adding some nuts and raw shredded veggies gives that little extra finish the the whole thing. And add some cooked grain for an even more filling meal.

Now - let’s get cooking!

Golden hummus bowl with red cabbage, tahini dressed carrots and blood orange

Serves 4

Golden hummus base

2 packages (á 230 grams drained weight) cooked chickpeas

2 Tbsp light tahini

1 dl / 0.4 cups water

1 tsp ground turmeric

salt and freshly ground black pepper

Topping

1/2 red cabbage

400 grams carrots

100 grams kale, chopped

1 blood orange

1 handful of walnuts

Tahini dressing

1/2 dl light tahini

3 Tbsp water

2 Tbsp apple cider vinegar

1 pinch of chili flakes

salt to taste

How to

Scrub the carrots and cut in smaller pieces. Slice the cabbage. Steam* for about 10 minutes, until the veggies are soft but still have that al dente bite to them. Mix all the ingredients for the tahini dressing, salt to taste, toss with the carrots.

Rinse and drain the chickpeas. Mix tahini and water until creamy. Add the rest of the ingredients for the hummus and mix until creamy. Salt and pepper to taste.

Massage the kale with oil and a pinch of salt until soft and silky. Slice the blood orange.

Spread out the hummus in 4 bowls. Top with a handful of left greens, kale, cabbage and carrots. Top with walnuts and sprinkle some extra chili flakes.

* This time I steamed both my cabbage and carrots, both because it takes only a few minutes and I was very hungry when cooking. If you have more time, and want your cabbage and carrots to get that delicious crisp to it I’d suggest you roast them in the oven at 175 °C / 350 °F for about 25 minutes instead!

Saffron quinoa with brassicas, avocado and pomegranate

Golden saffron with a lovely saffron flavour tossed with a bunch of different brassica! A semi raw favourite for the festive buffet!

Here comes one of my favourite salads for the winter season. Flavours and veggies that reminds me of candlelit dinners, cosy mornings and Christmas gatherings - all tossed together in to this recipe!

If you ask me every festive buffet requires a semi raw salad - a salad where at least most of the components are raw - great thing as that will add lots of texture and freshness which goes very well with basically anything. Cook the quinoa prior to serving and massage/shave/slice/deseed the rest of the components (preferably put the brassica i ice cold water to get them really crispy!)- then just toss it all together just before serving!

Saffron quinoa with brassica, avocado and pomegranate

Serves 4-6

Ingredients

3 dl / 1.2 cups white quinoa

0.25 grams saffron, ground

100 gram kale (you might want to use black kale instead of kale if you’re pairing this one with my pumpkin tray recipe from the previous post)

50 gram red cabbage

1 fennel

1 avocado, sliced

1 pomegranate, deseeded

1 dl / 0.4 cups mixed seeds and nuts, toasted

1 Tbsp extra virgin olive oil

flakey salt

How to

Cook the quinoa according to instructions on the packaging, together with the saffron.

Cut away the thick bottom steam of the kale, tear the leafs in to smaller pieces. Since they’ll the added raw to the salad you want the pieces to be quite small. Massage with olive oil and a pinch of salt until silky.

Shred the red cabbage thinly using a mandoline, a vegetable peeler or a sharp knife. Trim the fennel bulbs, then shred thinly on the width using a mandoline/vegetable peeler/sharp knife. Put cabbage and fennel in ice cold water for 20 minutes - this will make them extra crispy!

Toss together the cooked saffron quinoa, kale, cabbage, avocado, pomegranate and seeds/nuts!
