4 portioner

Ingredienser

250 gram marinerad tofu

1 gul lök

1 vitlöksklyfta

3 morötter

250 gram svamp

4 portioner kokt havreris, eller ris

1 näve färsk persilja

100 gram bladspenat

1/2 dl rostade mandlar, grovhackade

6 torkade aprikoser, finhackade

Olja till stekning

Flingsalt

Tahinicitrondressing

3 msk ljus tahini

3 msk vatten

1 msk tamari

1/2 ekocitron, zest + juice

Gör såhär

Skala och strimla löken, finhacka vitlöken. Skär tofun i tärningar.

For this easy stir fry I use leftover cooked naked oats from the day before (any other cereal such as rice, quinoa and spelt can be used too). I cook mine with a pinch of saffron in the water as it gives both a beautiful color and flavour! If you don’t have any cooked oats in your fridge you can ofcourse cook it as part of this recipe!

Tofu stir fry with vegetables and lemony tahinidressing

Serves 4

Ingredients

250 grams naturally firm tofu

1 yellow onion

1 garlic clove

3 carrots

250 grams mushrooms

4 portions cooked whole oats / naked oats, or rice (cook with a pinch of saffron)

1 handful parsley

100 grams babu spinach

1/2 dl toasted almonds, chopped

6 dried apricots, chopped

oil for frying

flakey salt

Lemony tahini dressing

3 Tbsp light tahini

3 Tbsp water

1 Tbsp tamari

1/2 organic lemon, zest + juice

How to

Peel the onion and garlic, slice the onion and finely chop the garlic. Cut the tofu in pieces. Brush and cut the carrots and mushrooms in smaller pieces. Fry onion and garlic in a drizzle of oil until soft. Add the tofu and fry for another couple of minutes until lightly golden. Add the veggies and fry for another couple of minutes. Add the cooked naked oats and toss together to warm up. Add the spinach and parsley and remove from heat.

Mix together the dressing. Salt to taste.

Drizzle with half of the dressing over the stir fry. Sprinkle with half of the almonds and apricots.

Serve the Stir fry with the rest of the dressing and the rest of the almonds and apricots.

Vindaloo masala daal with carrots and spinach + courgette raja with mint

From a tiny man selling his home mixed spice blends in a small town in India - to my kitchen, and soon maybe yours as well! This is a lentil daal like no else, with a secret trick to make it creamy as ever!

This recipe is inspired by a man with a spice mix stand in the small village Agonda in the Indian province Goa. He told me he made the best home made masala there is. Unfortunately I didn’t get to try his version - but tried my very best to remember each and every word he said when he explained how to make it. The result is right here below!

Vindaloo masala daal with carrots and spinach + courgette raja with mint

Serves 4-6

Ingredients

1 yellow onion

1-2 Tbsp vindaloo curry (to taste)

1 Tbsp ground turmeric

2 garlic cloves

1 aubergine

400 grams crushed tomatoes

8 dl / 3 1/3 cups water

3 dl / 1.2 cups red lentils

400 grams carrots

8 dried organic apricots

1 handful of fresh parsley + extra for serving

100 grams organic fresh baby spinach

2 Tbsp cold pressed coconut oil

salt and freshly ground black pepper

Courgette raja with mint

1/2 courgette

5 dl / 2 cups natural unsweetened plant yoghurt

1 handful of fresh mint

1 pinch of chiliflakes

salt och freshly ground black pepper

How to

Peel and finely chop the onion and garlic. Peel the aubergine and cut in to pieces. Heat the coconut oil over medium heat in a large saucepan. Add the vindaloo mix, turmeric, onion and garlic. Fry until fragrant and the onion has soften. You might want to add 1-2 Tbsp of water if it feels too dry.

Add aubergine, tomatoes and water. Bring to a boil and let cook for 10 minutes, until the aubergine is soft. Mix everything until smooth using an immersion blender.

Scrub and slice the carrots. Chop the apricots. Add to the saucepan together with lentils. Bring to a boil and let simmer for 20-25 minutes, until you get a very creamy daal. Maybe add a bit more water if it feels too dry. Remove from heat and add the parsley and spinach. Salt and pepper to taste.

Let the daal sit for at least 20 minutes before servering. Serve with extra spinach and rajta only, or with both + some wild rice/black rice/brown rice!

Winter stir fry with chanterelles, brassicas, Jerusalem artichokes and green pea and spinach dip

A filling stir fry served with a creamy dip for extra heartiness and flavour! This is no doubt my favourite way to cook!

Stir fries - one of the worlds easiest and maybe quickest ways to cook! Use whatever plants you have at home and let that be the base of you fry! I like to use a wok pan because I find it easier to give it all a good toss and shake with that pan - but of course you could use just any. Most important thing is - just get cooking!

Winter stir fry with chanterelles, brassicas, Jerusalem artichokes and green pea and spinach dip

Servers 4

Ingredients

2 dl / 0.8 cups wild rice, uncooked *

600 grams mixed types of mushrooms, I used chanterelles and oyster mushrooms **

500 grams mixed Brussels sprouts and/or flower sprouts (or, use any typ of Brassica such as dino kale/kale/Savoy cabbage)

250 grams Jerusalem artichokes

1 handful of fresh parsley

cold pressed coconut oil for frying

salt and freshly ground black peppar

Green pea and spinach dip

500 grams green peas, frozen thawed

100 grams organic baby spinach, fresh

1 handful of fresh cilantro

1 garlic clove

2 Tbsp light tahini

1 Tbsp apple cider vinegar

Salt and freshly ground black pepper

How to

Cook the wild rice according to instructions on the packaging. Let cool.

Brush the mushrooms, tear in to smaller pieces. Cut away the very bottom part of the Brussels sprouts and flower sprouts if necessary. Cut the bigger ones in half. Scrub the Jerusalem artichokes carefully, slice thinly.

Stir fry the Brussels sprouts and flower sprouts for 5 minutes in a tiny amount of oil (we want to keep it all fresh and light!) for 5 minutes. Add the mushrooms, Jerusalem artichokes and stir fry until it’s looks nice and gets a bit of golden coloured. Remove from heat. Salt and pepper to taste.

Mix all the ingredients for the dip. Salt and pepper to taste.

Serve the stir fry with with some wild rice and a good dollop of green pea spinach dip, sprinkle with parsley.

* If you cannot find wild rice any cooked whole grain will work!

** If you cannot get hold of fresh mushrooms of your liking dried (then soaked) or frozen ones works too!

Tray of roasted root veggies with spinach, naked oats and turmeric hummus

Always a good idea: roasted seasonal veggies on a tray with spinach and steel cut oats. Served with a creamy turmeric hummus!

This is one of my go to-dishes when I want to make hearty and filling food without having that much time to spend cooking. Because this is food that almost cooks it self! So the idea of this dish is very simple; put whatever veggies that are in season/you have at home on a tray, add some cooked grain and leafy greens and serve with some kind of legume-spread/dip (such as a hummus) for extra protein. DONE!

By using veggies in season the tray will naturally change throughout the year. For extra variation use quinoa, buckwheat (soaked or cooked), sorghum or wild rice instead of naked oats, just to mention a few! And remember; when making of a creamy hummus - always make some extra and you’ll be well sorted for the coming days. A hummus is great to use as spread on a seeds cracker / piece of bread / in a wrap / with vegetable crudités, with any kind of salad or as the base for a hummus bowl (like this one)!

Tray of roasted root veggies with spinach, naked oats and turmeric hummus

4 porions

Ingredients

2 dl / 0.8 cups naked oats

300 g parsnip

300 g carrot

300 g mixed beets

1 handful dried apple

70 g organic baby spinach

1 Tbsp cold pressed rape seed oil

salt and freshly ground black pepper

Golden turmeric hummus

2 Tbsp light tahini (I like to use the non roasted one/light one here as the flavour is more smooth compared with the darker one which has quite a sharp taste to it)

1/2 dl / 0.2 dl water

1 Tbsp apple cider vinegar

2 packages (á 230 g drained) pre cooked white butter beans

1/2 tsp ground turmeric

1/2 tsp ground ginger

a pinch of chili powder

1 Tbsp cold pressed rapeseed oil

salt and freshly ground black pepper

For serving

2 dl / 0.8 cups naked oats

a pinch of salt

How to

Cook the oats in lightly salted water on low heat for about 30 minutes. You want them to be soft but still have a nice bite to them. If you cook it for too long you’ll get more of a porridge. Drain any excess water.

Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Scrub the root veggies thoroughly, then cut in smaller same size pieces. Put on a baking tray, mix with oil. Roast in the oven for about 20-25 minutes, until the veggies have soften and are slightly golden, but still has that al dente bite to them. Add the cooked oats, apple and spinach to the tray.

Mix the tahini and water for the hummus. Drain and rinse the white beans. Mix all the ingredients with a immersion blender or using a food processor until smooth. Add the oil and mix a few more seconds. Salt and pepper to taste.

Serve the food straight from the tray, with the creamy hummus!

Green smoothie bowl with matcha chia pudding - and all the toppings you could ask for!

Matcha-coconut-latte-but-in-a-bowl-breakky! Just as important as the filling of the bowl is the topping! That's why I cannot decide and thereby use everything I can get my hands on.

I'm a huge matcha fan. I love it in smoothies, as traditional tea, as coating on my chocolate bliss balls and - as pictured above - in my chia pudding! The combination of matcha and coconut is a really great match - especially with a naturally sweet green smoothie!

Green smoothie bowl with matcha chia pudding

- and all the toppings you could ask for!

2 portions

Green smoothie

1 big, or two small, green banana/s (peeled, sliced and frozen)

1 fennel bulb

1 avokado, peeled and pitted

1 kiwi (buy organic and keep the peel!)

2 handfuls of baby spinach

water

freshly squeezed lemon juice

Matcha chia pudding

1/2 creamy coconut milk

1 1/2 dl water

1 tsp organic matcha powder

1/2 tsp pure vanilla powder

2 1/2 tbsp chia seeds

Topping suggestions

Fresh fruits or berries (I used kiwi and mango)

fresh herbs (for example mint, lemon balm or Thai basil)

puffed quinoa

cacao nibs

hemp seeds

shredded coconut

coconut yoghurt

How to

Start with the chia pudding: Bring water and coconut milk to a boil. Pour in to a jar and whisk together with matcha powder, pure vanilla powder, a pinch of Himalayan salt and chia seeds. Wait 10 minutes and then whisk again to prevent clumping. Cover and put in the fridge for at least 30 minutes.*

Mix together the ingredients for the smoothie in a high speed blender until completely smooth. Use water, a little at a time, to get your desired consistency. Add lemon juice to taste.

Divide the chia pudding and smoothie evenly in two bowls. Top with your favourites!

* If putting your chia pudding in fridge over night you don't need to heat up the liquid first - that's just a way to make the chia seeds soak quicker.

Quinoa and tofu salad with roasted sweet potatoes

What's-in-the-fridge on a bed of quinoa - with the right staples at home it can hardly go wrong!

A normal day at my apartment involves opening the fridge to see what veggies the upcoming lunch or dinner might involve. The day I came up with this salad I found sweet potato, half a cauliflower head, a bunch of parsnips, some baby spinach and tomatoes from my parents garden. Together with some quinoa (that I always have at home, often already cooked), a good quality cold pressed olive oil (also a staple at my home) the lunch was served!

Quinoa and tofu salad with roasted sweet potato

Serves 4

Ingredients

270 g extra firm organic natural tofu

2 small sweet potatoes

6 parsnips

2 dl uncooked black quinoa

1 small cauliflower

250 g plum tomatoes

100 g baby spinach

1 tbsp cold pressed coconut oil (preferably taste neutral)

Topping

1 handful of pecans

good quality cold pressed olive oil to drizzle

flakey salt

How to

Drain the tofu well and wrap in layers of kitchen roll. Then place in between two chopping boards and put something heavy on top. This is to press out all the excess water so you get a really firm tofu, which will then soak up all the flavours it will be mixed with really well. Let sit for at least 15 minutes, but the longer the better. Tear the tofu in to smaller pieces. Whisk together tamari and paprika powder, and pour over the tofu. Let marinate for at least 15 minutes. Fry in coconut oil right before serving until lightly brown and crisp.

Pre heat the oven to 200 degrees Celsius. Wash the sweet potatoes and parsnip well(when using organic vegetables keep the peel, does a lot both for flavour and texture!) and cut potatoes in to big chunks and parsnips in to big slices. Put on a baking tray and toss around with some olive oil. Roast in the oven for 20-25 minutes, until potatoes and parsnips are nice and soft (I like my parsnips to be kind of al dente though), tossing everything around half way through. Sprinkle with dried ramson, ord your favourite herb, ones roasted.

Cook the quinoa according to the instructions on the packaging. Shave the cauliflower using a mandoline, a cheese slicer or a really sharp knife. Wash and cut the tomatoes in the middle.

Toss tofu, sweet potato, parsnip, quinoa, cauliflower, tomatoes and spinach together. Drizzle with olive oil. Topp with pecans and sprinkle with your favourite flakey salt!
