Låt puttra i 10 minuter.
Skär tofun i små tärningar. Finhacka persiljan. Tillsätt till koket och stäng av värmen, smaka av med salt och peppar.
Ånga eller värm upp bönorna enligt anvisning på förpackning om du använder frysta. Får du tag i färska svenska förvälls dem i 5-7 minuter. Kyl sedan av med kallt vatten.
Brunch stir fry with mushrooms, carrot and almond sauce
In only a few minutes you get a filling bowl to serve a late weekend breakky or on your next brunch! Also, I share my best Basic bowl recipe!
A savoury weekend breakky or brunch bowl, drizzled with a creamy almond sauce. This bowl can be made with pretty much ANY veggies/legumes/whole grains really, below you find my basic-bowl-recipe if you want to make your own bowl!
Plant based by Thess Basic bowl recipe
serves 1
1 handful cooked whole grain
1 handful cooked legumes
2-3 vegetables
1 handful leafy greens
1 tiny handful of herbs or micro greens/sprouts/shots
nut/seed based sauce
Brunch stir fry with oyster mushrooms, carrots and almond sauce
Serves 2
Ingredients
1 1/2 dl / 1 cup naked oats or “mathavre”, if using naked oats they need to soak for at least 8 hours or over night
1/2 red onion
100 grams oyster mushrooms
2 carrots
1/2 apple
2 dl / 0.8 cups pre cooked black beans
1 handful organic fresh baby spinach
1 handful fresh parsley, chopped
Salt and freshly ground black pepper
Almond sauce
1 Tbsp almond butter
1 1/2 Tbsp water
1 tsp apple cider vinegar
1 pinch flakey salt
For serving
Lentil cracker with seeds and rolled oats
How to
If using naked oats; soak the oats over night, or for at least 8 hour. If you’re using “mathavre” you don’t have to soak them, the packaging will say weather you’d need to soak or not.
Cook the oats according to instructions on the packaging.
Peel and finely chop the onion. Fry in a bit of water in a wok pan until soft. Grate the carrots, tear the mushrooms in to smaller pieces, dice the apple. Add everything to the wok pan and fry for a couple of minutes.
Rinse the black beans. Add to the wok together with the parsley and fry for another couple of minutes. Add the spinach and remove from heat. Smalt and pepper to taste.
Mix the ingredients for the dressing. Salt to taste.
Divide the fry in two bowls, top with extra parsley and drizzle with almond sauce. Serve with a crispy lentil cracker.
Tray of roasted root veggies with spinach, naked oats and turmeric hummus
Always a good idea: roasted seasonal veggies on a tray with spinach and steel cut oats. Served with a creamy turmeric hummus!
This is one of my go to-dishes when I want to make hearty and filling food without having that much time to spend cooking. Because this is food that almost cooks it self! So the idea of this dish is very simple; put whatever veggies that are in season/you have at home on a tray, add some cooked grain and leafy greens and serve with some kind of legume-spread/dip (such as a hummus) for extra protein. DONE!
By using veggies in season the tray will naturally change throughout the year. For extra variation use quinoa, buckwheat (soaked or cooked), sorghum or wild rice instead of naked oats, just to mention a few! And remember; when making of a creamy hummus - always make some extra and you’ll be well sorted for the coming days. A hummus is great to use as spread on a seeds cracker / piece of bread / in a wrap / with vegetable crudités, with any kind of salad or as the base for a hummus bowl (like this one)!
Tray of roasted root veggies with spinach, naked oats and turmeric hummus
4 porions
Ingredients
2 dl / 0.8 cups naked oats
300 g parsnip
300 g carrot
300 g mixed beets
1 handful dried apple
70 g organic baby spinach
1 Tbsp cold pressed rape seed oil
salt and freshly ground black pepper
Golden turmeric hummus
2 Tbsp light tahini (I like to use the non roasted one/light one here as the flavour is more smooth compared with the darker one which has quite a sharp taste to it)
1/2 dl / 0.2 dl water
1 Tbsp apple cider vinegar
2 packages (á 230 g drained) pre cooked white butter beans
1/2 tsp ground turmeric
1/2 tsp ground ginger
a pinch of chili powder
1 Tbsp cold pressed rapeseed oil
salt and freshly ground black pepper
For serving
2 dl / 0.8 cups naked oats
a pinch of salt
How to
Cook the oats in lightly salted water on low heat for about 30 minutes. You want them to be soft but still have a nice bite to them. If you cook it for too long you’ll get more of a porridge. Drain any excess water.
Pre heat the oven to 175 degrees Celsius / 350 degrees Fahrenheit. Scrub the root veggies thoroughly, then cut in smaller same size pieces. Put on a baking tray, mix with oil. Roast in the oven for about 20-25 minutes, until the veggies have soften and are slightly golden, but still has that al dente bite to them. Add the cooked oats, apple and spinach to the tray.
Mix the tahini and water for the hummus. Drain and rinse the white beans. Mix all the ingredients with a immersion blender or using a food processor until smooth. Add the oil and mix a few more seconds. Salt and pepper to taste.
Serve the food straight from the tray, with the creamy hummus!

Veggie hash with steel cut oats and poached egg
You don't need much time to cook a nourishing and delicious meal - even for your weekday dinner. An opened mind and 20 minutes is all it takes. This quick veggie hash could look a 100 different ways depending on what veggies you have at home, and what season we're in!
A quick, and kind of twisted, version of the classic Egg fried rice! Well, not very much like egg fried rice all really, but based on the same idea of frying veggies + some grain and serve with egg.
I tend to use the veggies I have at home (or the seasonal veggies I just found at the grocery store), mix with cooked oats and serve with a poached egg. A filling and nourishing yet simple meal ready in 20 minutes!
Veggie hash with oats and poached egg
Serves 4
Ingredients
4 carrots
2 yellow beets
1/2 leek
100 gram kale, or chard - or the double amount baby spinach
4 dl steel cut oats
1 tbsp cold pressed olive oil
salt and freshly ground black peppar
Poached egg
4 egg
1 liter water
2 tbsp vinegar
1 tsp salt
Topping
Walnuts
fresh lemon balm
How to
Cook the steel cut oats according to instructions on the packaging.
Scrub the carrots, slice in to smaller pieces. Peel the beets, cut in to small chunks. Cut away the thick bottom steam part of the kale, tear the leafs in to smaller pieces. Cut the leek in half, wash carefully and finely shred.
Bring water, vinegar and salt to a boil in a medium saucepan. Crack one egg in a small cup. Lower the heat, you want the water to be simmering. Whisk a whirlpool in the water and gently slip the egg in to the center of the whirlpool. Put on a lid and let simmer for 3-4 minutes. Lift up the egg using a slotted spoon. Follow the same procedure for the rest of the eggs, one at a time.
Fry carrot and beet in a bit of oil in a frying pan or in a wok until golden och tender. Add the leek and kale and let fry for another couple of minutes. Remove from heat. Add the steel cut oats. Salt and pepper to taste.
Serve the fry with walnuts, lemon balm and poached egg.
