Sweet potato gnocchi with smashed green peas, bellaverde broccoli and toasted pine nuts
Scrolla ner för recept på Svenska
This is what I call food meditation! Making your own gnocchi is both easy and fun, although it involves a few steps — but it’s all worth it when you sit down to enjoy a meal like this! This is a basic recipe for the gnocchi, but you could also add some flavour such as ginger, garlic or herbs to your gnocchi dough. Don’t forget to pan fry your gnocchi before serving — makes all the difference for the texture!
The pretty deep green ramson oil is something your can do home — and it will make any dish feel like something you’d get at a fancy restaurant! The ramson oil kan be kept in your fridge for weeks.
Now - Let’s get started!
Sweet potato gnocchi with smashed green peas, bellaverde broccoli and toasted pine nuts
Serves 4
Sweet potato gnocchi
500 grams sweet potato
2 Tbsp nutritional yeast
3 1/2 dl oat flour + extra for dusting
1/2 tsp salt
1 garlic clove
500 grams frozen green peas, thawed
7 sage leaves, finely chopped
Ramson oil
2 dl cold pressed olive oil
25 grams fresh ramson
20 grams pea shots
For serving
250 grams Bellaverde broccoli or 1 broccoli
pine nuts, toasted
fresh chives, finely chopped
1 organic lemon, zest and juice
How to
Ramson oil: Bring a small saucepan filled with water to a boil. Add the ramson and pea shots and let simmer for 30 seconds, then transfer them to a bowl with ice cold water. Let cool. Take out and press out excess water, then add to a blender together with the oil. Mix until smooth. Let sit for at least 1 hour, then drain the oil using a nut milk bag. The ramson-green-pea-mixture can be saved and added to any kind of soup or plant patties!
Gnocchi: Peel, chop and boil the sweet potatoes until soft, about 15 minuets. Let cool completely. Grate or mash the sweet potato, add the flour and salt and kneed until a dough. Let sit for 30 minutes. Divide the dough in to 4 pieces, dust with flour and roll out to long ropes. Cut small pieces from your “ropes”. When your done bring a large saucepan filled with water and a pinch of salt to a boil. Add the gnocchi (about 15 at a time) and stirr gently to avoid them from sticking together. Let simmer until they float, let them simmer for another 30 seconds, and then scoop them up with a slotted spoon. Put on a plate and let cool completely.
Pre heat a pan to medium heat. Toast the pine nuts until golden. Set aside.
Add a some oil to the pan. Peel and finely chop the garlic, fry in a drizzle of oil until soft. Add the gnocchi. Pan-fry until golden and slightly crisp. In a bowl, mash the green peas using a fork. Add to the pan together with the sage and fry for another couple of minutes. Remove from heat. Salt and pepper to taste.
Bake the Bellaverde broccoli in the oven at 175°C for about 10 minutes, until slightly crisp.
Serve the pan-fried gnocchi with the Bellaverde broccoli and pine nuts, sprinkled with lemon zest and chives, drizzled with lemon juice and ramson oil.

Låt vila i 30 minuter. Dela sedan i 4 delar, pudra med mjöl och rulla ut till runda längder. Skär i mindre bitar, ca 1 1/2 centimeter.
Vindaloo masala daal with carrots and spinach + courgette raja with mint
From a tiny man selling his home mixed spice blends in a small town in India - to my kitchen, and soon maybe yours as well! This is a lentil daal like no else, with a secret trick to make it creamy as ever!
This recipe is inspired by a man with a spice mix stand in the small village Agonda in the Indian province Goa. He told me he made the best home made masala there is. Unfortunately I didn’t get to try his version - but tried my very best to remember each and every word he said when he explained how to make it. The result is right here below!
Vindaloo masala daal with carrots and spinach + courgette raja with mint
Serves 4-6
Ingredients
1 yellow onion
1-2 Tbsp vindaloo curry (to taste)
1 Tbsp ground turmeric
2 garlic cloves
1 aubergine
400 grams crushed tomatoes
8 dl / 3 1/3 cups water
3 dl / 1.2 cups red lentils
400 grams carrots
8 dried organic apricots
1 handful of fresh parsley + extra for serving
100 grams organic fresh baby spinach
2 Tbsp cold pressed coconut oil
salt and freshly ground black pepper
Courgette raja with mint
1/2 courgette
5 dl / 2 cups natural unsweetened plant yoghurt
1 handful of fresh mint
1 pinch of chiliflakes
salt och freshly ground black pepper
How to
Peel and finely chop the onion and garlic. Peel the aubergine and cut in to pieces. Heat the coconut oil over medium heat in a large saucepan. Add the vindaloo mix, turmeric, onion and garlic. Fry until fragrant and the onion has soften. You might want to add 1-2 Tbsp of water if it feels too dry.
Add aubergine, tomatoes and water. Bring to a boil and let cook for 10 minutes, until the aubergine is soft. Mix everything until smooth using an immersion blender.
Scrub and slice the carrots. Chop the apricots. Add to the saucepan together with lentils. Bring to a boil and let simmer for 20-25 minutes, until you get a very creamy daal. Maybe add a bit more water if it feels too dry. Remove from heat and add the parsley and spinach. Salt and pepper to taste.
Let the daal sit for at least 20 minutes before servering. Serve with extra spinach and rajta only, or with both + some wild rice/black rice/brown rice!

Socca with kale pesto & mushroom and apple stir fry
First time I ever had a socca was at a early morning food market in Antibes, France. I’ve recreated my memories and paired it with the seasons finest!
A south European savoury pancake made of chickpea flour that goes perfectly well with a LOT of different dips, salsas, stir fries and compotes! Here I’ve made a filling out of the seasons finest; kale, mushrooms and sweet winter apples!
Socca with kale pesto & mushroom and apple stir fry
4 portions
Ingredients
2 1/2 dl / 1 cup chickpea flour
3 1/3 dl / 1.4 cups water
1 pinch salt
600 grams forrest mushrooms
2 winter apples
1 package of pre cooked butter beans
1 handful of fresh parsley, chopped
cold pressed coconut oil for frying, flavour free
Kale pesto
100 grams fresh kale
1 handful of fresh parsley
1 small garlic clove
1 dl / 0.8 cups cold pressed rapeseed oil
1 Tbsp apple cider vinegar
2 Tbsp nutritional yeast
1 dl / 0.8 cups pepitas/pumpkin seeds
salt and freshly ground black pepper
For serving
Fresh parsley
sprouts
How to
Mix together the chickpea flour, water and salt. Let sit for 15 minutes. Heat a frying pan to medium heat. Add a drizzle of oil and a thin layer of batter. Fry for a couple of minutes, then turn around and fry for another minute. Do the same with the rest of the batter.
Cut away the thick bottom steam of the kale, tear the leafs in to smaller pieces. Mix all the ingredients, except for the pepitas, for the pesto until smooth. Add the pepitas and pulse a few times. Salt and pepper to taste.
Brush the mushrooms. Dice the apples. Rinse the beans. Fry everything in a tiny bit of oil until it get a nice lightly golden color. Salt and pepper to taste. Add the parsley.

Sweet potato hummus with roasted garlic and tarragon
My favourite hummus in the world! Irresistibly creamy, sweet and kind of nutty - with a herby touch! Spread it on a seed cracker, add to your wrap or have it with a hearty salad.
Hummus, my favourite dip/spread/sauce/filling - or what ever you might call it! Except for the lovely texture and delicious flavour I really like hummus because of it's nutrition - it's a great way to add some extra protein (and fibers and vitamins and minerals!) to your plant based meal! Spread it on seed cracker, add to your wrap or have it with a hearty salad. Traditionally a hummus is made of chickpeas, but sometimes I use white beans instead - I really like the variation (food hack #1 in this post - look for easy made variations and cooking will be much more fun and simple!)!
Another way to vary your hummus is to add different veggies (like beetroot, roasted carrot, green peas, grilled bell pepper etc) and herbs - also a perfect way to match the hummus with what ever you're serving it with - or what you're craving at the moment!
In my book The new green salad I share three of my favourite hummus recipes - and one of them you find here below! It happen to be my favourite hummus in the world - irresistibly creamy, sweet and nutty at the same time - with a herby touch!

Sweet potato hummus with roasted garlic and tarragon
Yield about 5 dl
Ingredients
240 grams (about 4 dl) cooked chickpeas *
1 small sweet potato, about 250 grams
1 garlic bulb **
2 tbsp tahini (preferably the light one, made of natural sesame seeds)
1/2 dl water
12 fresh tarragon leafs, or 1 tsp dried tarragon
2 tbsp cold pressed olive oil + extra to drizzle as garnish
Himalayan salt and freshly ground black pepper to taste.
Garnish
Sesame seeds
Chili flakes
How to
Pre heat the oven to 200 degres Celsius. Peel the potato and cut in to chunks, put on a baking sheet and mix with 1/2 tbsp olive oil. Remove the outer skin from the garlic bulb, enough for you to see the garlic cloves (skin on) separately with but yet you want the whole bulb to stick together. Brush with 1/2 tbsp olive oil. Put next to the sweet potatoes and roast in the oven for 30 minutes until potatoes and garlic are soft. Let cool.
Mix water and tahini until creamy using an immersion blender or food processor. Add the rest of the ingredients (squeeze out the garlic), except for the olive oil and tarragon, mix until creamy. Add 1 tbsp olive oil and tarragon and mix to combine. Salt and pepper to taste. Drizzle with oil and sprinkle with sesame seeds and chili flakes before serving.
Tip! Make a big batch and store in a air tight container in your fridge! Then you'll be ready for snackning, brunching, dining or having guest at any time. Food hack #2 in this post. A staple in my home! Lasts up to about a week.
* Either use canned ones, or by dried and soak/cook yourself! If so, make sure to cook a big batch and put the ones you're not using for the recipe in different sized portions in your freezer! Takes about 2 seconds to take out when ever you want to use chickpeas the next time! Food hack #3 in this post)
* * YES, a whole (!) garlic bulb! After half an hour roasting in the oven it will be all soft and sweet with an almost caramelised kind of flavour. It's lovely!
