400 gram potatis

100 gram vitkål

100 gram svartkål

1 msk pumpafrövinägrett

1 tsk rapsolja

Grön ärt-tsatsiki

250 g gröna ärtor, tinade

2 msk kallpressad olivolja (+ extra till servering)

1 dl fet växtyoghurt

1 liten riven vitlöksklyfta

zest och juice från 1 ekologisk citron

1 näve färsk basilika

flingsalt och svartpeppar

Pumpafrövinägrett

1⁄2 dl rostade pumpakärnor

1 dl kallpressad rapsolja

1⁄2 dl äppelcidervinäger

1/2 dl vatten

2 tsk dijonsenap

Salt och svartpeppar

Mandelfeta

100 g skållade mandlar, blötlagda i 12 timmar

2 msk äppelcidervinäger

1⁄2 dl god kallpressad olivolja

1 msk näringsjäst

1 tsk flingsalt

Recept för syrad lök hittar du här!

Gör såhär

Mandelfeta: Blötlägg mandlarna i vatten i 12 timmar. Lägg i kyl i 12 timmar. Baka i 30 minuter.

Spelt salad with roasted potatoes, green pea tsatsiki and almond feta

Serves 4

Ingredients base

1 1/2 dl whole spelt, soaked in water over night (or, for a quicker version use a  cereal which doesn’t need soaking prior cooking — such as quinoa, sorghum or oats)

400 grams potato

100 grams cabbage

100 grams black kale / dino kale

1 Tbsp pumpkin seed vinaigrette (see recipe below)

1 tsp rapeseed oil

Green pea tsatsiki

250 grams green peas

2 Tbsp cold pressed olive oil

1 dl full fat plant yoghurt

1 smal garlic clove

Zest and juice from 1 organic lemon

1 handfull of fresh basil (or 2 tbsp frozen)

Flakey salt and black pepper to taste

Pumpkin seed vinaigrette

1/2 dl toasted pumpkin seeds

1 dl cold pressed rape seed oil

1/2 dl apple cider vinegar

1/2 dl water

2 tsp dijon mustard

Flaket salt and black pepper to taste

Almond feta

100 grams blanched almonds

2 Tbsp apple cider vinegar

1/2 dl cold pressed olive oil

1 Tbsp nutritional yeast

1 tsp flakey salt

How to

Almond feta: Soak the almonds over night. Rinse and mix with the rest of the ingredients until smooth and creamy. Put the mixture in a cheese cloth or kitchen cloth and twist it to squeeze the almond mixture in to a tight ball. Put in the fridge for 12 hours. Pre heat the oven to 125°C. Take out the almond ball from the cloth and press down on a baking tray, until it’s about 1 cm high. Bake for 30 minutes. Let cool.

Green pea tsatsiki: Mix all the ingredients until smooth. Salt and pepper to taste.

Pumpkin seed vinaigrette: Toast the pumpkin seeds in a dry frying pan on medium heat until the start to “pop”. Mix all the ingredients until smooth. Salt and pepper to taste

Pickled onion: Recipe here

Base: Soak the spelt over night. Rinse and cook for about 35 minutes. Pre heat the oven to 200°C. Scrub the potatoes, cut in smaller pieces if they’re big, toss with a drizzle of oil. Roast in the oven until golden and lightly crisp, about 25 minutes. Finely shred the cabbage and black kale. Massage with about 1 Tbsp of the dressing until they soften. Toss together cooked spelt, potato and cabbage mix.

Serve the base with green pea tsatsiki, extra vinaigrette, almond feta and pickled onion!

Plant sushi with brown rice and yummy fillings

Everything is okay in sushi making, if you ask me. Fill your rolls with what every you love and everything will be alright. Here are a few of my favourites!

The perfect thing to make during a dinner with friends, prepare all the fillings (or whatever fillings you fancy today) and sit down together to make your rolls! However - these rolls I made a not-at-all-ordinary week day when I came of and found some leftovers in the fridge. So, it works very well for 1 person meals too!

Plant sushi with brown rice and yummy fillings

Makes about 60 pieces

Ingredients

6 nori sheets

6 dl brown rice

1/2 tsp salt

Filling 1 - Tahini dressed black kale / red cabbage / pickled ginger / avocado

100 grams black kale

1 Tbsp light tahini

1 Tbsp water

salt to taste

100 grams red cabbage

1 fresh ginger

1/2 dl apple cider vinegar

1/2 dl water

1/2 avocado

Filling 2 - Pickled carrot / black garlic hummus / chives / apple / avocado

2 carrots

1/2 dl apple cider vinegar

1/2 dl water

1 can (á 230 grams drain weight) pre cooked chickpeas

1 Tbsp light tahini

1/2 dl water

2 black garlics (fermented garlic, can be bought in delis and online. If you cannot find black garlic you can bake a regular garlic bulb instead and use a few cloves from that one, se notes in the end of the recipe *)

salt to taste

1 pinch of chives

1 red apple

1/2 avocado

For serving

Furikake (Japanese spice blend. I developed a blend for my friends at GRANIT. You can also make your own; blend 2 Tbsp white and 2 Tbsp black sesame seeds, 1 Tbsp dried chives, 1 Tbsp nutritional yeast, 2 Tbsp dried seaweed and 1 tsp flakey salt)

Tamari / soy sauce

green pea tempeh (stir fried tempeh / tamari / fresh parsley)

cucumber salad (slices cucumber / tamari / chili flakes)

How to

Rinse the rice in cold water a couple of times. Then add new water (I good help is to always have about 2 centimeters between the uncooked rice and the water surface in your pot, the rice always gets perfect that way!), salt and bring to a boil. Simmer until rice is ready. Let cool.

Filling 1) Remove the tough steam from the black kale, chop the rest in smaller pieces. Whisk together tahini, water and salt. Toss around with the black kale. Finely shred the red cabbage. Scrape off the ginger peel using a small spoon. Cut the ginger in thin slices. Bring vinegar and water to a boil, add the ginger, remove from heat, put on a lid and let sit for minimum 20 minutes. Peel and deseed the avocado, and slice it thinly.

Filling 2) Scrub the carrots and slice thinly - OR preferably use one of my favourite kitchen tools; a julienne peeler to get thin strips in seconds. Bring vinegar and water to a boil, add the carrot, remove from heat, put on a lid and let sit for minimum 20 minutes. Rinse the chickpeas. Mix all the ingredients for the hummus together using a mixer or food processor, until smooth. Salt to taste. Slice the apple thinly. Peel and deseed the avocado, and slice it thinly.

Put a nori sheet on a clean kitchen towel. Top a nori sheet with a layer of cooked brown rice, leaving about 1 centimeter at either of the short sides, and flatten gently. Wet your fingers in dipping water if rice starts to stick to your fingers when pressing down on the sheet. Place the filling at the middle of rice (on the width). Then start to roll the whole thing together by folding in the side where you have rice all the way out. Continue to roll together, hold the filling down using your fingers, and keep a gentle pressure on the roll during the whole rolling (you’ll get help from the kitchen towel here, traditionally you’d use a bamboo mat but if you don’t have one a towel work fine). Put som water on the free part of the nori sheet and roll together, this with make the nori sheet to stick together. Do the same thing with the rest of the sheets / rice / fillings. Slice the rolls in 10 pieces / roll.

  • Whole baked garlic. Remove the outer layer ot the garlic peel, however you still want the bulb to stick together. Brush with oil all around and bake in the oven at 175°C for about 30 minutes. Let cool and then press out the smooth garlic. When baked the garlic get’s a lighter taste to it, so you can use more cloves then if you were using raw. I often have a whole baked garlic when makes for example hummus!

Beluga lentil and naked oats salad with cinnamon roasted carrots, black kale and pecans

Autumn on a plate. During the cold season I prefer warm salads - like this one! A mix of hearty roasted veggies, crispy Dino kale, crunchy pecans and sweet cranberries.

This is perfect way of enjoying all the wonderful winter flavors that are around this time of year. Great texture, warming flavors and lots of healthy goodies in one plate is how I would describe this pretty salad. I used one of my favorite grains, naked oats, and beluga lentils as the base for this salad. The naked oats needs to soak for a few hours before cooking, so this one needs a bit of preparation. But it’s well worth it! I often cook a lot (both naked oats and beluga lentils) at the same time and store some in the fridge. Then I have a great base for all sorts of salads at any time.

Crispy-on-the-outside-soft-on-the-inside-carrots, crispy kale, soft and warming apples, nutty pecans and sweet cranberries all add to the whole winter feeling in this salad. I finished it all off with another thing I always have in the fridge – my herb dressing. It’s super easy and makes any sallad or dish really yummy.

Serve the salad as it is or with a piece of goat cheese, or as a side salad to your winter dinner. Why not put in on your christmas dinner table? I hope you really enjoy it!

Beluga lentil and naked oats salad with cinnamon roasted carrots, black kale and pecans

Serves 4

Ingredients

1 dl beluga lentils

1 dl naked oats

4 medium sized carrots

250 grams black kale

2-3 garden apples

50 grams pecan nuts (approx. 1 dl)

60 grams dried cranberries (approx. 1 dl), preferably without sugar

Herb dressing

1 dl cold pressed rapeseed oil

1/2 garlic clove

1 tsp lime juice

1 dl of your favorite fresh herbs (or 3 tbsp frozen)

sea salt, black pepper to taste

How to

Preheat the oven to 225 degrees celsius. Cook the naked oats and beluga lentils according to the instructions on the packaging (naked oats needs to soak for at least one hour before cooking).

Peel and cut the carrots in to chuncks. Drizzle with olive oil, season with salt and pepper. Wash and tear the black kale in to bits, massage with olive oil, salt and pepper. Cut the apples in to chunks and season with cinnamon. Put the carrots on a baking sheet and roast in the oven for about 25 minutes. Turn the carrots half way through. When 10 minutes remains, lower the temperature to 200 degrees, and add the black kale and apples. Bake until the kale are crisp.

Mix all the ingredients for the herb dressing in a mixer, or using a immersion blender.

Mix the roasted carrots, kale and apples with the naked oats and beluga lentils. Put on a big plate, sprinkle with pecans and dried cranberries. Drizzle with the herb dressing. Serve and enjoy!
